Baked masala brinjal ( Egg plant )

Ingredients :
Large brinjal  : 1
Plain yoghurt ( dahi ) : 1/2 cup
Besan ( Bengal gram flour ) : 3 tsp
 Garlic paste : 1 tsp
Green chilli paste :  1 tsp
Red chilli powder : 1 tsp
Garam masala : 1/2 tsp
Salt : 1/2 tsp ( as per taste )
Sugar : 1/2 tsp
Vegetable oil : 2 tsp
Turmeric powder : 1/2 tsp
Finely chopped coriander : 1tsp
Grated cheese : 1/2 cup ( optional )

Recipe :
1. Cut a thin slice of brinjal as shown in the picture.
2. Cut the slices but do not separate them. ( Pl refer the picture )  
3. Apply little oil on the whole brinjal . Keep aside.

Masala prepration  ( filling ):
1. Add besan,chilli, garlic paste, red chilli powder & all other ingredients along with yoghurt. 
2. Add oil. Preserve little oil to apply on brinjal. Mix well.
3. Consistency should not be runny. Adjust besan accordingly. 
4. Fill the brinjal slices with the filling. Add filling generously. Also fill cheese in between all slices.
5.Bake the filled brinjal in preheated oven at 200C for 25 minutes. Check in between. 
Enjoy the delicious baked masala brinjal with tomato ketchup. 


Shevai ( Vermicelli) sheera

We always prepare shevai kheer with shevai. Try this sheera tastes so yummy & looks also different!!



Ingredients :
Shevai (Vermicelli) : 1/2  Cup
Powdered sugar : 3 /4 Cup 
Milk   : 1 Cup
Water : 1/2 cup
Elaichi (Green Cardamom) powder : 1 tsp
Golden raisins : 4 tsp
Desi Ghee : 4 tsp
Coarse almond powder : 2 tsp
Saffron : 7-8 threads ( optional )
Small pinch of Salt.
Whole cashews : for garnishing


Recipe :
1. In a heavy bottom pan or kadhai add 3 tsp of desi ghee.
2. When ghee dissolves add shevai in it & roast properly till it turns brownish red. You will come to know with its heavenly aroma. You get roasted sevai in the market in that case  roast lightly in melted ghee & mix properly
3. On another gas stove boil water & milk withsugar.  Add elaichi powder.
4. Add this mixture in the roasted shevai & cover the pan.
5.Keep on low flame.
6. Mix it properly & cover the pan. Keep it on low flame till all milk &  water mixture evaporates. 
7. At this stage add remaining 1 tsp ghee mix again properly & turn off the flame.
8. Let it covered for 5 minutes. Add raisins & almond powder
9. Garnish it with roasted cashews & serve hot !!

Golden Oats cookies

Ingredients :
All purpose flour ( Maida ) : 11/4 cup
Rolled Oats :1 cup
Castor sugar or Powdered sugar : 3/4 cup
Desiccated coconut : 3/4 cup
Golden syrup : 1 tsp ( easily available in the market )
Butter : 1/3 cup
Vanilla essence : 1/2 tsp
Baking soda : 1/2 tsp
Boiling water : 1 tsp

Recipe : 
1.In a mixing bowl mix sifted flour( maida ), oats, dessicated coconut & sugar.
2. combine butter & golden syrup in a pan & heat on low flame until butter melts & mixture becomes smooth. Turn off the gas.
3. Dissolve baking soda in boiling water & immediately add to butter mixture. Mix well.
4. Mix dry mixture & butter mixture well.
5. Shape the mixture with one level of tablespoon into ball or shape as you like. Put on lined tray.
6. Bake in preheated  the oven at 180 C for 15-20 min or till cookie turn golden brown.s
9. Cool for 2 minutes. Transfer on wire rack & cool completely.
10. Store in a air tight container.


Oats, Quinoa, vari chaval ( barnyard millet ) uttapa

Ingredients  :

Barnyard millet ( Vari or bhagar chaval ) : 1 cup
Plain oats : 1 cup
Quinoa : 1 cup
Udid dal ( split gram dal ) :  1/2  cup
Moong dal : 1/4 cup
Chana dal : 2 tsp
Fenugreek (Methi ) seeds : 1/2 tsp
Chopped spinach : 1 cup
Chopped onion : 1/2 cup
Chopped capsicum : 1/2 cup
Chilli flakes  or red chilli powder : 1 tsp
Salt : 1 tsp or as per taste
Oil :  for greasing griddle
Butter : to apply on the top of uttapa ( optional )

Recipe :
1. Soak vari chaval, oats, quinoa, udid dal, chana & moong dal, methi seeds in a large bowl overnight or 4- 5 hours is also sufficient.
2.Grind the mixture along with salt to fine paste.
3. Keep it for 8 hours for fermentation.
5. Mix the batter properly after fermentation. If required add some more salt.
7. Mix all chopped vegetables, Add red chilli powder & salt & mix well.
    You can use any veggies of your choice.
8.Grease non stick griddle with little oil. Prepare utappa with the veggies toppings.
    This Uttappa really tastes awesome moreover it is healthy too.
Enjoy with sambar or chutney !!

Eggless moist chocolate Brownie

Easy delicious Egg less moist mouth watering chocolate Brownie !!



Ingredients :
All purpose flour ( maida )  : 1 1/2 cup
Grated Chocolate or chips : 3/4 cup  ( Used Amul dark chocolate )
Chopped Walnuts : 1/2 cup
Castor Sugar or powdered sugar  : 3/4 cup
Warm milk   : 3/4 cup
Butter : 1/2 cup  ( I used Amul butter )
Baking Powder : 2 tsp

Recipe :
1. Add chocolate & butter in a big bowl.
2. Turn on the gas & melt the chocolate with double boiler method.
3. When all the chocolate melts turn off the gas.
4. Add sugar & vanilla essence in the butter chocolate mixture & mix well. Add chopped walnuts.
5. Sieve maida & baking powder in the above mixture.
6. Incorporate maida with chocolate properly. The mixture becomes thick.
7. Add milk & mix well. Consistency will be smooth & silky.
8. Pour the batter in greased mould.
6. Bake the cake preheated oven at 180 C for 25 minutes.

Cut the brownie in small pieces & enjoy this chocolaty moist delicious cake.

Oats Bread

A very tasty & healthy Bread for breakfast !!!



Ingredients :
Plain Oats : 1  cup 
All purpose flour ( maida) : 1 cup
Whole wheat flour : 1/2 cup
Dry yeast : 2 1/4 tsp ( I used Blue Bird )
Sugar : 2 tsp
Salt : 3/4 tsp
Olive oil : 6 tsp ( Any vegetable oil can be used )
Butter : 2 tsp (To apply on the surface of the bread )
Warm water : 1 1/4 cup
Sesame seeds : 1 tsp
Mixed herbs : 1 tsp
Chopped coriander : 2 tsp ( Optional )

Recipe :
1. Take yeast & sugar in bowl.
2. Add warm water in yeast & sugar mixture.
3. Keep aside for 5 minutes.
4. You will observe bubbles & mixture will be fluffy.
5. Add salt, 3 tsp olive oil, oats, whole wheat flour & maida . Mix to make a nice dough.
6. Transfer the dough on clean greased platform. Knead the dough about 10 min. till it becomes elastic.Use olive oil as required. 4 tsp will be good enough.  
7. Prepare a soft dough  & keep in a big bowl .Cover the bowl  . Let it rest for 1 hour.
8. After 1 hour the dough will be double of original size.
9. After 1 hour punch the dough & again knead for about 10 minutes.
10. Prepare the shape of the loaf in a greased loaf pan.
11. Again keep the tray for about 1/2 hour.
12. After proving the loaf apply  little water on the top so that it will not be dry.
13. Sprinkle sesame seeds, mixed herbs & chopped coriander on the top.
14. Bake the loaf in preheated oven at 200 C for 20 minutes or till it turns brown.
15. Apply butter on the bread when it is hot.
This bread is not as soft as white bread but tastes awesome.
 I also prepared small buns with same dough in cup cake mould which also turned out very nice.

   Enjoy hot home made soft  bread with butter or with hot tea!!!

Multi grain bread loaf

Ingredients :

Multi grain flour : 1 1/2 cup ( I used Ashirwad brand multi grain flour )
All purpose flour ( maida) : 1 cup

Thumb print jam cookies

Eggless thumb print jam cookies!!


Ingredients :
All purpose flour ( Maida ) : 1 cup
Butter : 3 tbsp ( I used Amul butter )
Desi ghee : 1 tsp
Powdered sugar : 3 tsp ( Add more if you want more sweetness. )
Vanilla essence : 1/2 tsp
Jam : for filling ( I used mix fruit jam )

Recipe : 
1.Beat butter & sugar in a bowl with mixer. I used hand beater.
2. Mix till mixture becomes fluffy. 
3. Add Vanilla essence & mix well.
4. Add flour & desi ghee. Make a nice dough.
5. Keep the dough in Fridge or 1/2 an hour.
6. Keep tray ready with butter paper. Greasing is not required.
7. Prepare the balls with hollow in the centre.
8. Fill with jam. Bake the cookies at 180 C for 10 to 12 minutes.
9. Cool for 2 minutes. Transfer on wire rack & cool completely.



Egg less upside down custard cake

Beautiful egg less custard cake !!






Ingredients :
Custard powder : 1/3 cup ( I used Vanilla flavour )
Milk : 1 1/2 cup ( for custard )
Milk : 1/3 cup ( for suji cake )
Fine suji : 1 cup
Plain yoghurt : 2 tsp
Powdered Sugar : 1 cup  ( If you want  more sweetness add more )
Tutti fruity : 4 tsp
Desi ghee or any odourless oil : 1/4 cup
Baking Powder : 1  tsp
Baking Soda     : 1/4 tsp
Vanilla essence : 1 tsp
Red rose colour : 3 drops ( optional ) But because of colour 2 layers of cake are distinguished.

Recipe : For custard
1.Take custard powder in a bowl & prepare smooth paste by adding 1/2 cup of  milk.
2. Add milk in a heavy bottom. Add sugar.  
3. Add the smooth custard paste when milk starts boiling. Add 2 tsp tuti fruity.
4. Turn off the gas. Pour the mixture in a greased tin in which cake is to be baked.
5. Let it cool to set evenly.

Batter for suji cake :
1. Add suji in a bowl.
2.Add yogurt,1/3 cup of warm milk, 1/2 cup of sugar, tuti fruity, ghee or oil, vanilla essence & mix well. Add 3 drops of red rose colour. Mix again.
3. Add baking powder & baking soda. Mix well, add little milk if required.
4. Pour this batter on the custard which is cooled down completely & set properly.
5. Bake for 30 minutes in preheated oven at 180C.
This cake tastes awesome & looks very beautiful !!!

Pink sprouted lentil usal ( whole masur )

Ingredients :
Whole pink sprouted lentils  : 2 cups 
Chopped onion : 1/2 cup
Chopped tomato : 1/2 cup
Coarse Garlic paste : 1 tsp
Ginger paste : 1/2 tsp
Green chilli paste : 1 tsp
Red chilli powder : 1 tsp
Goda masala : 1 tsp
Garam masala : 1/2 tsp
scraped fresh coconut : 1/4 cup
Salt : 1/2 tsp ( as per taste )
Jaggery : 1/2 tsp
Vegetable oil : 2 tsp
Mustard seeds : 1/2 tsp
Cumin seeds : 1 tsp
Turmeric powder : 1/4 tsp
Hing : 1/4 tsp
Curry leaves : 7-8
Chopped coriander for garnishing.

How to sprout the lentils :
1. Soak 1& 1/2 cup lentils in 4 cups of water overnight.
2. Transfer it on next day in sieve. Let all the water fall down.
3. Keep covered in warm place for two days for longer sprouts.

Recipe :
1. Add  oil in a heavy bottom pan or kadhai.
2. Add mustard seeds & cumin seeds when oil becomes hot. Add hing & turmeric powder.
3. Add green chilli, garlic & ginger paste in the oil. Saute for a minute. Add curry leaves.
4. Add  onoin & Stir the mixture properly till onion becomes soft.
5. Add chopped tomato & mix well.
7. Add jaggery & salt. Cover the pan till tomato & onion cook. 
8. Add goda masala , garam masala ,coconut. Mix & let it cook.
9. Garnish with coriander leaves.
