Curry leaves( kadhi patta ) tasty chatney

Ingredients :
Washed & dried curry leaves : 2 Cups
Roasted Peanuts: 1 Cup
Roasted Sesame (til) seeds : 2 tbsp
Red dried chillies : 4-5 or as per taste
Dry tamarind ( chinch ) : 2 inch ( 2-3 pieces)
Sugar : 1/2 tsp
Salt : 1 tsp or as per taste
Oil : 1 tsp

Recipe :
  1. Add oil in a heavy bottom vessel or kadhai. Turn on the gas.
  2. Add curry leaves in the oil when it becomes hot.
  3. Roast the curry leaves till it become crispy.Let them cool completely. Green colour should be retained.
  4. Add roasted peanuts & sesame seeds 
  5. Add red chillies, dry tamarind, sugar & salt.
  6. Grind coarsely in the mixer & enjoy this tasty chutney with Phulka or Bhakri.!
          You can eat this chutney with Idli by adding yoghurt !! 

Bottle Guard ( Lauki or Dudhi ) & Carrot soup

Ingredients :
Chopped Bottle guard (dudhi / Lauki) : 1 cup
Grated or chopped Carrot : 1/2  cup
Chopped onion : 1/4 cup
Bay leaf ( Tej Patta or Tamal patra ) : 1
Cinnamon ( Dalchini ) : 1 inch piece
Nutmeg ( Jayphal ) powder : Small pinch
Butter : 1 tsp
Low fat milk : 1 cup
Low fat cream : 1/4 cup ( optional )
Sugar : 1/2 tsp
Salt : 1 tsp ( as per taste )
Ground black pepper : 1/2 tsp

Recipe :
  1. Add butter in a heavy bottom vessel.
  2. Add bay leaf , cinnamon when oil becomes warm.Add chopped onion.
  3. Add little sugar & salt.
  4. Sauté till onion becomes soft.
  5. Add Bottle guard and carrot.
  6. Cook till it becomes soft. Do not overcook.
  7. Turn off the gas stove.
  8. Let the mixture becomes cool.
  9. Remove bay leaf & cinnamon stick.Grind it along with a 1/2 cup of milk to very smooth paste.
  10. Again transfer this mixture in a vessel. Add remaining milk, cream & nutmeg powder into it.
  11. Boil for some time. Turn off the gas.
  12. Add salt to the taste. 
  13. Adjust the milk according to the consistency.
  14. Garnish with fresh ground black paper.
  15. Enjoy this creamy & healthy soup!!!

10 minutes Besan Laddu in Microwave Oven

This is a very simple & quick recipe which just saves your efforts to roast the besan. Morover it is roasted evenly only in 5-7 minutes.  Try this recipe which is favourite of everyone.    


Ingredients :
Besan: 2 cups
Semolina ( fine Rava ): 2 tsp
Desi Ghee : 5 tsp
Powdered Sugar : 1/2 cup
Dry fruits : Chopped Cashews & Raisins
Elaichi Powder (Green Cardamom) : 1 tsp
Small pinch of Salt.

Recipe :
  1. Add desi ghee in a  big microwavable bowl .
  2. Keep the bowl in microwave oven for 1 min. or till it dissolves.
  3. Add besan & rava in the ghee.
  4. Again microwave the mixture for 3 min. ( full power in my microwave oven ) without covering.
  5. Take the bowl out of microwave oven, stir the mixture properly  & repeat the procedure for 3-4 times. After every one minute stir the mixture very well. It will take about 5-7 minutes to roast the besan. You can smell the nice aroma when it is roasted nicely.
  6. Let it cool completely.  
  7. Add sugar, dry fruits & elaichi powder.
  8. Roll the laddus as per size you want & enjoy !!
Note : If you find the mixture dry then add 2-3 tsp warm milk & microwave for a minute & then roll the laddus.

Creamy Broccoli & Spinach soup

One of the healthy & delicious soup!!!!



Ingredients :
Broccoli florates : 1 cup 
Spinach leaves : 1/4 cup
Chopped Onion : 1/4 cup
Bay Leaf ( Tejpatta or Tamalptra ) : 1
Butter : 1 tsp
Low fat  Milk : 1 Cup
Low fat cream : 1/4 cup
Salt : 1/2 tsp ( as per taste )
Sugar : 1/2 tsp ( optional )
Black pepper : 1/2 tsp

Recipe :
  1. Add butter in a heavy bottom vessel.
  2. Add bay leaf & chopped onion in the butter.
  3. Add little sugar & salt.
  4. Saute till onion becomes soft.
  5. Add Broccoli & cook till it becomes soft. Do not over cook.
  6. Add chopped spinach & saute for some time.
  7. Turn off the gas stove.
  8. Let the mixture cool. Remove bay leaf.
  9. Grind it along with a 1/2 cup of milk to very smooth paste.
  10. Again transfer this mixture in a vessel. Add remaining milk &  cream into it.
  11. Boil for some time. Turn off the gas.
  12. Add salt to the taste. 
  13. Adjust the milk according to the consistency.
  14. Garnish with fresh ground black paper.
  15. Enjoy this creamy & healthy soup!!!

Kelyachi ( Banana) Dashmi

This is very simple, healthy & quick recipe ideal for lunch box for children. Can be substitute for Phulka or Roti !!



Ingredients :
2 ripe mashed bananas : 3/4 Cup
Wheat flour : 3/4  Cup
Rice Flour : 1/4 Cup
Desi ghee : 1 1/2  tsp.
Milk : 1/2 cup
powdered sugar :1 tsp
Fresh coconut : 2 tsp
Elaichi powder : 1/2tsp ( optional )

Recipe :

1. Add banana pulp in bowl.
2. Add wheat & rice flour into banana pulp.
3. Add fresh coconut, sugar, elaichi powder & ghee. Preserve 1/2 tsp for greasing non stick griddle. Because of ghee you will get nice aroma & brown colour to Dashmi.
4. Add milk as required. Watch consistency.
 Dashmi is prepared directly on griddle ( tawa). Use non stick Griddle & prepare Dashmi.
5. Decorate with fresh coconut & serve!!!
It tastes yummy even if it is not hot !!

Sarsoka Saag & Makkeki Roti

Sarsoka saag :

Ingredients :
Chopped Mustard leaves ( Sarso)  : 1 Cup (1 Bunch )
Chopped Batua Leaves  : 1 Cup  ( 1 Bunch )
Chopped Spinach  : 1 Cup (1 Bunch )
Chopped Onion : 1 Cup
Chopped Tomatos : 1/2 Cup
Chopped Garlic : 1 tbsp
Chopped Ginger : 1/2 tsp
Chopped green chilli : 1 tsp or as per taste
Garam Masala : 1 1/2 tsp
Red Chilli powder : 1/2 tsp
Salt : 1 tsp ( as per taste )
Sugar : 1/2 tsp
Vegetable oil : 2 tsp
Cumin seeds : 1 tsp
Coriander powder : 1 tsp
Water : 1 1/2 cup
makaika ata : 2 tsp
Fresh Cream : 4 tsp Cup
Butter : 2 tsp

Recipe :
1.Add mustard, batua & spinach leaves in pressure cooker. Add 3/4 cup onion, garlic, green chilli, ginger,red chilli powder, garam masala, coriander & cumin powder in it. save 1/4 cup onion for garnishing.
2. Pressure cook the above mixture till 3 whistles. Let it cool. Grind in the mixer to fine paste adding makaika ata.
3. Transfer this mixture to heavy bottom pan & keep for simmering upto 30 minutes.
4. In another pan add oil & 1 tsp butter. Add remaining onion & saute till brown. 
5. Add this onion to the veggis mixture keeping some onion for garnishing. 
6. Mix well & cook for 2-3 minutes. Turn off the gas.
7. Add fresh cream & mix.
8. Garnish with green chilli, onion & butter.
9. Serve hot.
      Enjoy this healthy & Delicious  bhaji with hot makkeki roti.


Makkeki Roti:
Corn flour : 1 1/2 Cup
Whole wheat flour : 1/2 cup
Chopped coriander leaves : 2 tsp
Finely chopped onion : 2 tsp
Ajwain ( carom) seeds : 1 tsp
Salt : 1/2 tsp
Water : as required
Butter to apply on roti.
Mix all the ingredient & Knead the flours with salt & water. & prepare the rotis. Serve hot with dollop of butter.

Sweet Khandvi ( in Microwave Oven)

Ingredients :
Rice rawa (Idli rawa ): 1 cup
Jaggery ( gul ) : 3/4 cup
Fresh coconut : 1/2 cup ( frozen can be used bringing to room temp.)
Warm milk : 1/2 cup
Fresh Cream :1/4 cup ( optional) can use 1/4 cup milk instead
Desi Ghee : 2 tsp
Elaichi powder : 1 tsp
Dry fruits : Sliced almonds & pistachio
Roasted Poppy seeds ( Khaskhas) : 1 tsp
Small pinch of Salt.

Recipe :
  1. Roast the Rice rawa in a big microwavable bowl for 2 1/2 min. till colour turns pink. 
  2. Stir after 1 1/2 min. & again keep in microwave for 1 min. Keep aside.
  3. In another bowl add  jaggery, fresh coconut, milk, cream, little pinch of salt & elaichi powder.
  4. Mix properly. Preserve 1 tsp coconut for decoration.
  5. Add  desi ghee in microwavable bowl. Microwave for 30 sec. or till it dissolves.
  6. Add above mixture & roasted rice rava in the bowl containing ghee. Mix properly.
  7. Microwave the mixture for 2 1/2 min. without covering.
  8. Take the bowl out of microwave oven & repeat the procedure for 2 min. 
  9. Taste the mixture. If rice rawa is not cooked properly add 1-2 tsp milk & microwave for 1 min.
  10. Keep ready one tray or dish greasing with  ghee . 
  11. Transfer the mixture in a greased tray.
  12. Decorate it with coconut, poppy seeds & sliced dry fruits.
  13. Cut into big pieces & enjoy this delicious recipe !!!
You can use mashed fully ripe banana for variation in flavour. In that case reduce the quantity of jaggery little bit. Add more milk if required.

This recipe can be prepared on gas stove without microwave oven. In that case add 4-5 tsp desi ghee for roasting rice rawa. Follow the same procedure.

Schezwan Poha ( Beaten Rice )

We all prepare our Indian traditional recipe Onion Poha or potato poha. I tried this different innovative recipe & it turned out soo tasty. Pl do try this really healthier version as it contains lots of veggies.

 

Ingredients :
Thick Poha  : 2 Cups
Chopped onion : 1 Cup
Chopped Capsicum : 1 Cup ( 2 medium size )
Chopped Cabbage : 1 Cup
Grated Carrot : 1 Cup
Chopped Green Onion : 1 1/2 Cup
Chopped Tomato : 1 Cup
Green Peas : 1 Cup
Chopped Green Chillies : 1 tsp
Cumin seeds : 1  tsp
Lemon Slices for decoration
Salt : 1 1/2  tsp or as per taste
Vegetable oil : 1/4 Cup or 6 tsp
Schezwan  Chutney : 4 tsp

Recipe :
1. Soak Poha in enough water.
2. Add oil in a heavy bottom vessel or in a kadhai.
3. Add cumin seeds & chopped green chillies  in the oil.
4. Add  2 tsp Schezwan chutney in the oil.
5. Roast for some time. You will experience yummy spicy aroma.
6. Add white onion, cabbage, capsicum, carrot, green peas , tomato one by one.
7. Mix all the ingredients properly. Do not overcook veggies. They should be half cooked.
8. Add 1 cup green onion & soaked poha in the veggis.
7. Preserve 1/2 cup green onion for decoration.
8. Mix properly.
9. Turn off the flame when proper mixing is done.
10. Decorate with lemon slice & green onion.
11. Sprinkle Coriander leaves if you want.
12.Serve hot this mouth watering recipe !!!

Non fried Batatevade

Ingredients :
Boiled & mashed potatos  : 2 Cups
Finely chopped onion : 1/2 Cup
Ginger paste : 1 tsp
Garlic paste : 1 tsp
Green chilli paste : 1 tsp
Chopped curry leaves : 1 tsp
Lemon juice : 3 tsp
Red chilli powder : 1 1/2 tsp
Hing : 1/2 tsp
Cumin seeds : 1/2 tsp
Mustard seeds : 1/2 tsp
Turmeric powder : 1/2tsp
Salt : 1 tsp or as per tatse
Coarsely ground peanuts powder : 2 tb sp
Chopped coriander : Handful
Vegetable oil : 4 tsp
Besan : 3/4 cup
Water as required for batter
 Baking powder : 1/4 tsp ( optional )

Recipe :
1. Take boiled mashed potatos in a vessel.
2. Add  ginger, green chilli, garlic paste & handful of coriander leaves.
3. Add 1 tsp red chilli powder, salt  & lemon juice.
4. Mix all ingredients properly.
5. Add 2 tsp oil in a kadhai. Heat the oil.
6. Add  mustard seeds, cumin seeds, turmeric powder, hing & curry leaves. Add onion & saute  till it  becomes translucent.
7. Add potato mixture into it.
8. Mix properly.
9. Prepare small balls of this mixture.

For Basan batter :
Add basan in a bowl.
Add  1/2 tsp turmrtic powder, 1/2 tsp red chilli powder, salt as per taste.
Add water to make smooth paste.
Add a pinch of soda bicarb (optional).

Grease Appe pan with little oil.
Dip the potato balls in besan batter.
Place the balls in Appe pan.
Cook both sides.
Enjoy the guilt free hot batatevade with chutney & hot cup of tea!!!!








Navratan korma

Ingredients :
Vegetables cut into small cubes:
Cauliflower : 1  Cup
Green beans  : 3/4 Cup
Carrot : 3/4 Cup
Potato : 3 /4 Cup 
Green peas ( Fresh or frozen ) : 1 Cup
Paneer cubes : 1 Cup
Chopped Onion : 1 cup
Chopped Tomato : 1 Cup
Cashew nuts : 7-8 cut in halves ( optional )
Garlic cloves : 7-8
Green Chilli paste : 1/2 tsp
Ginger : 1 inch piece
Red chilli powder : 2 tsp
Garam Masala : 2 tsp
Corriender leaves : For decoration
Roasted Sesme seeds : 1 tsp
Poppy seeds ( Khaskhas ) : 1 tsp
Milk : 3 tsp ( to soak poppy seeds )
Fresh cream : 4 tsp
Salt : as per taste
Sugar : 1 tsp
Vegetable Oil : 4 tsp

Recipe :
1. Soak poppy seeds in  milk for 2-3 hours.
2. Boil all the vegetables to soft. Do not overcook.
3. Keep aside the vegetables.
4. In a heavy bottom vessel boil onion & tomato with little water. It should be soft to grind.
5. Grind coarsely garlic cloves, chilli, ginger & roasted sesame seeds together.
6. Keep aside chilli, garlic, ginger & sesame mixture .
7. Grind onion & tomato to a smooth paste.
8. Also grind poppy seeds with milk to smooth paste.
9. Add oil in a heavy bottom vessel or kadhai.
10. Roast chilli, garlic, ginger, sesame mixture & add onion tomato paste into it.Then add paste of  poppy seeds. 
11. Fry this masala properly & then add garam masala & red chilli powder.
12. Mix all masalas properly. Add little water if required.
13. Add all the boiled veggies & paneer.  also add cashew nuts. Mix gently.
14. Add some fresh cream & mix. Decorate with little coriander leaves.
15. You can add pieces of pineapple if you like.
16. Serve with hots phulkas or paratha !!!
