Very simple Coconut cake!! Just in 3 steps.







Ingredients :
Fine Suji : 3/4 cup
All purpose flour ( Maida ) : 3/4  cup
Descicated coconut : 1 cup ( Fresh coconut can be used )
Sugar : 3/4 cup
Plain yoghurt ( Dahi)  :  3/4 cup
Warm milk   : 3/4 cup
Desi ghee or oil : 1/4 cup
Baking Powder : 1  tsp
Baking Soda     : 1/4 tsp
Vanilla essence : 1 tsp

Recipe :
1. Add suji, maida, coconut, sugar, Ghee or oil , milk & yoghurt in a big bowl.
2. Mix well. Stir gently.
3. Add vanilla essence , baking powder  & baking soda. Fold the batter gently.
4. Bake the cake in greased tin in oven at 180 C for 35 minutes.
Decorate with  coconut & enjoy this delicious cake.

One more Healthy Breakfast cereal !!






Ingredients :
Oats : 21/2 cups ( I used Suffola oats )
Wheat flex  : 1 cup
Corn flex  : 1 cup
Amaranth grain ( Rajgira lahi )   : 1/2 cup
Flax seeds ( Javas or Alsi ) : 1/4 cup
Chopped roasted Almonds: 1/3 cup
Chopped roasted Walnuts  : 1/3 cup
Chopped black raisins : 1/2 cup
Golden raisins ( khismis ) : 3 tsp
Honey : 2 tsp
Olive oil : 2 tsp
Cinnamon powder ( dalchini ) : 1/2 tsp
Nutmeg powder ( jayphal) : 1 tsp
Vanilla essence : 1/2 tsp
I used plain corn & wheat flex which are available very cheep in market.


Recipe :
  1. Roast oats , Wheat flex, Corn flex one by one by adding very small amount of olive oil.
  2. Roast Rajgira lahi & flax seeds. 
  3. Roast till all the cereals turn brown & crispy.
  4. After cooling  mix all the cereals.  
  5. Add chopped almonds, walnuts, raisins, khismis, nutmeg & dalchini powder.
  6. Add honey. Mix all the ingredients properly.
  7. Again roast for 5 minutes on medium flame till all the ingredients mix nicely.
  8. Cool completely. Store the cereal in a airtight container.
  9. Serve this healthy with hot or cold milk as per your choice.
  10. You can add fresh fruits if you like. 
Above measure yields about 750 gms .

Home made delicious pizza

 Ingredients for Pizza dough:
All purpose flour : 1 1/2 cups
Wheat flour : 1/2 cup
Active dry yeast : 1/2 tsp
Salt : 3/4 tsp
Sugar : 1/2 tsp
warm water : 1 cup
Olive oil : 2 tsp
Mixed herbs : 1 tsp ( optional)

Recipe : 
In a large bowl add sugar & warm water.
Add yeast in it. Do not shake. After 10 -15 minutes when the mixture becomes frothy add salt & olive oil. Add all purpose flour( maida) & whole wheat flour slowly & fold gently. A sticky dough is formed. Keep covered for 1 hour. It will be double in volume. Gently  knead it & again keep for 15-20 minutes.

Pizza toppings :
Chopped spinach : 2 cups
Grated carrot : 1 cup
Sliced green capsicum :1 cup
Paneer : 15 cubes
Sweet corn : 1/2 cup
Onion cut into cubes : 1/2 cup
Tomato slices : 1/4 cup ( optional )
Walnut : 1/2 cup
Cheese : 1 cup
You can use veggies as per your choice.


Pizza sauce :
Fresh tomatoes : 5 or ( chopped 1 cup )
Onion : 1 medium size
Garlic : 3-4 cloves
basil or coriander : 2 tsp
Dry herbs : 1/2 tsp
Olive oil : 1 tsp
Sugar : 1/2 tsp

Recipe :
Cook tomatoes for 2 minutes in boiling water. Cool it & grind in the mixer, Do not make fine paste.
Grind onion & garlic.
Heat a heavy bottom pan on gas stove. Add olive oil . Add onion & garlic paste, saute for 2 minutes.
Add tomato paste, salt, sugar, basil leaves or chopped coriander & dry herbs. Simmer for 3-4 minutes. Add 2-3 tsp water if required.



Make 4 equal parts of the dough.& prepare pizza base with the help of pane. Apply pizza sauce. Assemble the pizza with. the toppings you like. Add grated cheese generously.
Bake in the oven for 15-20 minutes at 180 C.
Above measures make 4 small size ( 6 inch) pizzas.

Quinoa & Moong dal dhokla

Ingredients :
White Quinoa : 3/4 cup
Moong Dal  : 1/2 cup
Ginger paste : 1/2 tsp
Chilli paste : 1/2 tsp
Lemon juice : 1 tsp
Salt : 1 tsp ( as per taste )
Sugar : 1 tsp
Lemon juice : 2 tsp
Yoghurt : 2 tsp
Vegetable oil : 2 tsp
Mustard seeds : 1/2 tsp
Sesame seeds : 1/2 tsp
Turmeric powder : 1/2 tsp
Plain eno powder : 1/2 tsp
Curry leaves : 4-5
Chopped coriander : for garnishing.
1 green chilli : for garnishing

Recipe :
1. Soak Quinoa & moong dal for 4 hours in a bowl.
2. Drain the water & grind it with yoghurt & little water.
3. Add ginger & chilli paste.
4. Add turmeric powder, lemon juice,salt & sugar. Give a good mix.
5. Add eno to the mixture & immediately pour into greased plate or thali.
6. Cook in the pressure cooker for 15 minutes without pressure. Let it cool.
7. Prepare  tadka using oil, mustard seeds, sesame seeds  & curry leaves. Add 1 tsp water in it.
8. Pour tadka on cooked dhokla.
9. Cut into pieces you like garnish with chopped coriander leaves & green chilli & serve with green chutney !!

Easy eggless Pineapple upside down cake

Ingredients :
All purpose flour ( Maida) : 1  Cup
Corn flour : 1 tsp
Yoghure ( Dahi ) : 3 tsp
Baking soda : 1/2tsp
Baking powder: 3/4 tsp
Yoghurt ( plain Dahi ) : 1/2 Cup
Warm Milk : 1/2 cup
Butter : 4 tsp
Sugar : 5 tb sp
Brown sugar : 2-3 tb sp
Vanilla Essence : 1 tsp
Cherries : for decoration

Bottom prep: 
Grease the baking tin with butter & sprinkle brown sugar on it.
Arrange the pineapple pieces above butter & brown sugar.
Decorate with cherries. Keep aside.

Recipe :
1. Sift maida, baking powder & baking soda. Keep aside.

2. In a bowl add yoghurt, sugar, melted butter, vanilla essence & beat well. Add warm milk & mix well.

3. Add the above mixture of maida & baking soda  baking  powder slowly & combine it. Do not over beat the mixture. 

4. Batter will be thick. Spread it over the pineapple layer evenly.

5. Bake in the oven for 15 -20 minutes at 180 C.or insert a tooth pick & watch.

6. Let the cake cool completely.

7. Flip in the serving plate. Cut & enjoy this delicious & very light cake.



Moong dal flour & besan barfi in microwave oven ( without ghee)

Ingredients :
Moong dal flour : 3/4  Cup
Besan : 3/4 Cup 
Milk powder   : 3/4 Cup
Fresh Cream : 1 cup ( I used fresh cream from home which comes above milk after boiling& it was cow milk.)
Fine suji : 1 tsp
Powdered sugar : 1/2 cup
Elaychi powder  : 1/2 tsp
Saffron :  5-6 threads
Chopped roasted almonds : 2 tsp
Desi Ghee : for greasing tray

Recipe :
1. Dry roast moong dal flour, besan & suji in a microwavable bowl. It takes 5-6 minutes. After every minute take bowl outside stir & again microwave. Repeat the same procedure till the flours become brownish. Keep aside. You can dry roast in kadhai or heavy bottom pan also.
2. In another microwavable bowl take fresh cream & milk powder.
3. Mix properly.There should not be lumps. I mixed with hand whisker.
4. Microwave for 2 minutes.Again give a good stir. Microwave for 1 minute. 
5.Add sugar, elaichi powder & saffron threads.
6. Mix it properly & again microwave for 1 minute.
7.Now in this mixture add roasted flours & mix.
8. Again microwave till mixture becomes thick. After every 1 or 2 minutes take bowl outside & stir. It will take about 4-5 minutes. Thus all the process takes about 10 to 15 minutes.
9. Transfer the mixture to a greased tray when it becomes thick . Spread evenly & garnish with chopped almonds. Let it cool.
10. Keep in the refrigerator for an hour & cut into pieces as you like & enjoy!
      This burfi can be prepared using  besan only.

 You can serve this different barfi as desert also !!

If you want to prepare without microwave add 4 tbsp desi ghee in a heavy bottom pan roast the flours & rawa nicely. In this case add  1/4 cup of cream & 2 tsp milk powder only.  After roasting & adding cream & milk powder  add powdered sugar.Follow the remaining recipe. With milk powder & cream it tastes like khoya. 




Sweet corn, Chana dal & Moong dal snack

One very tasty & healthy snack !!!! 
Even can be used as side dish in Lunch or Dinner!!




Ingredients :
Fresh or frozen sweet corn : 3/4 cup
Chana dal : 3/4 cup
Moong dal : cup 1/4
Curry Leaves :  7-8
Green chilli paste : 1 tsp
Garlic paste : 1 tsp ( optional )
Oil : 4 tsp
Cumin seeds : 1/2 tsp
Sesame seeds : 1 tsp
Hing : 1/4 tsp
Lemon Juice : 3 tsp
Salt : 1 tsp or as per taste
Sugar : 1 tsp
Roasted peanut powder ( coarsely grounded) : 3 tsp

For garnishing :
Fine sev ( nylon sev )
Chopped Coriander
Pomegranate seeds

Recipe :
1. Soak chana dal & moong dal for 4-5 hours.
2. Drain all the water on sieve.
3. Pressure cook the drained dals & sweet corn for 3 whistles without keeping water in container. Keep dals & sweet corn in separate containers.
4. Let it cool completely. Then grind dals & half of the sweet corn coarsely. Keep half of the corns     whole.
5. Heat oil in a heavy bottom pan or kadhai.
6. When oil becomes hot add cumin seeds, sesame seeds, hing, turmeric powder. garlic & chilli paste.
7. Then add coarsly grounded dals  & corn. Add salt, sugar & lemon juice. Mix properly. Cover the pan & let cook for 5 minutes on the steam. Open the cover & stir again. Add whole cooked corns. Again cover for 2 minutes. Add peanut powder, stir & off the flame.

Garnish with sev, pomegranate seeds & coriander & enjoy this tasty & healthy dish!!
