Khaskhashichya ( Poppy seeds ) vadya

Khaskhas is very nutritious as it is with high levels of calcium, iron, magnesium , phosphorus etc. It is recommended for new mothers also ( Ref: Wikipedia ).






Ingredients :
Khaskhas ( poppy seeds ) : 2  Cups
Almonds : 1 Cup 
Fresh cream : 1 Cup
Milk : 1 Cup ( For soaking Khaskhas )
Water : 1/2 approx ( for soaking almonds )
Sugar : 1 Cup
Powdered sugar : 2 tsp
Elaychi powder  : 1 tsp
Pistasio :  For garnishing
Desi Ghee : 3 tsp + for greasing tray

Recipe :
1. Soak Khaskhas in warm milk for 4-5 hours in a bowl. Do not add too much of milk. It should be above the level of khaskhas.
2. In another bowl soak almonds in warm water for 4-5 hours. Peel of the skin.
3. Grind soaked khaskhas & peeled almonds to a fine paste.
3. Take 2 tsp of ghee in a heavy bottom pan preferably non stick pan or kadhai. Turn on the gas. Add the mixture of khaskhas & almonds when ghee melts. 
4. Add cream & sugar. Mix properly. 
5. The mixture is liquefied as sugar melts.
6.Stir continuously adjusting the flame of gas stove. It should not burn.
7.When mixture starts solidifying add elaychi powder, remaining 1 tsp ghee & powdered sugar.
8. Transfer the mixture in a greased tray when it becomes thick . Spread evenly & garnish with sliced pistachios. Let it cool.
9. Keep in the refrigerator for an hour & cut into pieces as you like.
     




Sambar masala

 Samabar masala with very few ingredients to prepare tasty sambar !! 





Ingredients :

1. Coriander seeds ( Dhane ) : 1 cup
2. Chana dal : 1/4 th cup
3. Raw rice : 1 tbsp
4. Fenugreek seeds : 1 tsp
5. Curry leaves : Handful
6.Whole dry red chilli : 15 ( kashmiri + byadgi )
7. Hing : 1/2 tsp

Recipe :

1. Dry roast coriander seeds till it turn light brown.
2. Like wise also dry roast chana dal, rice & fenugreek seeds light brown.
3. Roast curry leaves till it become crunchy.
4. Roast dry red chilli & hing lightly.
5. Mix all the ingredients. Let mixture cools down completely.
6. Grind in mixer & store sambar  masala in airtight jar.
Use as required to prepare tasty & aromatic sambar.

Alivache Ladu ( Gardencress seeds)

Most easy & healthy recipe !! 

Ingredients :
Aliv seeds : 1/2 cup
Grated fresh coconut : 1 1/2 cup ( frozen can be used )
Jaggery : 3/4 cup ( chopped finely or jaggery powder can be used)
Add more jaggery if you like more sweetness.
Roasted & chopped almonds : 1 tbsp  ( optional )
Chopped cashews : 1 tbsp ( optional )
Golden & black raisins : 2 tbsp
Green elaychi powder  or nutmeg powder : 1/4 tsp

Recipe: 

1. Clean aliv seeds & soak in 1 1/2 cup of fresh coconut water for 3-4 hours. You can keep overnight.
    If coconut water is not available soak in plane water only.
2. After soaking aliv will be double in volume.
3. Transfer it to a heavy bottom pan.
4.  Add fresh coconut & jaggery. Mix well  all the three ingredients.
5. Start the gas flame. Keep first  2 minutes on high flame & then on medium heat.
6. Stir continuously. Jaggery will start melting.
7. The mixture will become thick & aliv seeds will be cooked.
8. Turn of the gas stove.
9. Add elaychi or nutmeg powder & dry fruits.
10. Roll the laddus as per size you want.
These laddus are very healthy. 

Surlichi vadi in pressure cooker

Easy way to prepare surlichi wadi !!



Ingredients :
For Batter :
Besan  : 1 cup 
Yogurt : 1 cup
Water : 1 cup ( Adjust according to thickness of yoghurt )
Turmeric powder : 1/2 tsp
Ginger & green chilli paste : 1 tsp
Salt : 1/2 tsp or as per taste
Sugar : 1/2 tsp

For filling :
Cheese, paneer or grated fresh coconut.
Here I used grated cheese for some variation.

For seasoning :
Oil : 2 tsp
Mustard seeds : 1/2 tsp
Sesame seeds : 1/2 tsp
Chopped coriander : for garnishing

Recipe :
1.In a vessel which fits in pressure cooker add besan, yogurt,turmeric powder, salt & ginger & chilli paste.
2. Mix well. Add little water & make smooth paste. Add water step by step. The batter should be little thicker than milk.
3. Place the vessel in pressure cooker. cover the cooker with whistle on.
4. Take 3 whistles on medium flame. Let pressure cooker cool. 
5. Open the cooker. Stir the mixture fast till the batter becomes smooth.
6. Spread the batter on clean platform while it is hot.
7. The process should be really fast.
8. Let it cool. Spread cheese on it. Roll surlichi vadi as shown in picture.
9. Prepare the seasoning using oil, mustard seeds & sesame seeds & pour  on rolled surlichi vadi.
10. Garnish with chopped coriander .
Enjoy this yummy recipe as side dish or evening snack.
