Healthy tilgul laddu

Prepared this tilgul with unusual ingredients !!




Ingredients :
Roasted unpolished sesame seeds ( til ) : 1 cup
Oats  : 1 cup
Roasted peanuts : 1/2 cup
Roasted Flax seeds powder ( javas/ alsi )  : 1/4 cup
De seeded (pitted) chopped black dates : 1/2 cup
Finely cut jaggery or jaggery powder : 1/2 cup
Desi Ghee : 6 tsp
Black Raisins : 1/4 cup 
Elaichi Powder (Green Cardamom) : 1 tsp

Recipe :
  1. Add 2 tsp desi ghee in a heavy bottom pan.
  2. When ghee melts add oats & roast till brown.
  3. Add dates & mix properly.
  4. Add coarsely grounded sesame seeds, peanut powder & flax powder. 
  5. Mix properly. Add jaggery & remaining ghee.
  6. Jaggery melts because of heat. 
  7. Roll the laddus when mixture is hot as per size you want & enjoy !!


Vari chaval idli

I just tried this vari chaval idli & it turned out so fluffy & soft. Vari is healthy replacement for rice!!
Must try recipe !!






Ingredients :
Barnyard millet ( Vari or bhagar chaval ) : 1 cup
Udid dal ( split gram dal ) :  1/3   cup
Moong dal : 1/4 cup
Chana dal : 2 tsp
Fenugreek (Methi ) seeds : 1/2 tsp
Kumure ( puffed rice ) : 1/2 cup
Salt : 1 tsp or as per taste
Oil : 3 tsp for greasing idli mould.

Recipe :
1. Soak vari chaval, udid dal, moong dal, chana dal & methi in a large bowl overnight or 4- 5 hours is also sufficient.
2.Grind the mixture along with salt & puffed rice ( kurmure ) to fine paste. 3
3. Keep it for 8 hours for fermentation like normal chaval idli.
5. Add red chilli powder & salt.
6. Mix the batter properly after fermentation. If required add some more salt.
7. Prepare idlis as usual greasing idli mould.

Enjoy this light & soft idli with sambar & chautney.



Cauli flower & fresh green beans bhaji

Simple recipe for new cooks !!




Ingredients :
Chopped cauli flower : 2 cups 
Potato : 1 medium size cut into cubes
Carrot : 1 small cut into cubes ( optional )
Fresh green beans ( valache dane ) : 1/4 cup
Chopped onion : 1/2 cup
Coarse Garlic paste : 1 tsp
Green chilli paste : 1 tsp or as per taste
Chopped curry leaves : 1 tsp
Red chilli powder : 1/2 tsp
Salt : 1/2 tsp ( as per taste )
sugar : 1/2 tsp
Vegetable oil : 2 tsp
Cumin seeds : 1 tsp
Turmeric powder : 1/4 tsp
Hing : 1/4 tsp
Fresh coconut  : 2 tsp
Finely chopped coriander for garnishing.
Recipe :
1. Add  oil in a heavy bottom pan or kadhai.
2. Add cumin seeds when oil becomes hot. Add hing & turmeric powder.
3. Add green chilli, garlic & curry patta in the oil. Saute for a minute.
4. Add  onoin & Stir the mixture properly till onion becomes soft.
5. Add cauli flower pieces, potato, carrot & boiled green beans  & mix well.
7. Add sugar & salt. Cover the pan till all vegetables cook. Do not over cook.
8. Add fresh coconut, mix & let it cook without covering the pan till bhaji becomes dry.Garnish with coriander.
      Enjoy this tasty  bhaji with hot fulka.

Simple palak (spinach bhaji )

Simple palak (spinach bhaji ) in 10 minutes


Ingredients :
Chopped tender spinach :4 cups 
Chopped onion : 1/2 cup
Coarse Garlic paste : 1 tsp
Green chilli paste : 1/2 tsp or as per taste
Red chilli powder : 1 tsp
Salt : 1/2 tsp ( as per taste )
Jaggery : 1/2 tsp
Vegetable oil : 2 tsp
Cumin seeds : 1 tsp
Turmeric powder : 1/4 tsp
Hing : 1/4 tsp
Coarse pea nut powder : 2 tsp
Recipe :
1. Add  oil in a heavy bottom pan or kadhai.
2. Add cumin seeds when oil becomes hot. Add hing & turmeric powder.
3. Add green chilli, garlic in the oil. Saute for a minute.
4. Add  onoin & Stir the mixture properly till onion becomes soft.
5. Add chopped spinach & mix well.
7. Add jaggery & salt. Cover the pan till spinach cooks. It takes hardly 5 minutes. 
8. Add peanut powder, mix & let it cook without covering the pan till bhaji becomes dry.
      Enjoy this tasty  bhaji with bhakri or roti.

Simple baigan ( vangi ) bhaji

Simple baigan & fresh green beens ( valache green dane ) sabji



Ingredients :
Small purple baigan   : 10-12 
Boiled Fresh bean seeds ( valache dane )  : 1/2 Cup
Boiled chooped potato : 1/4 cup ( optional )
Chopped onion : 1/4 cup
Coarse Garlic paste : 1 tsp
Green chilli paste : 1/2 tsp or as per taste
Red chilli powder : 1 tsp
Salt : 1 tsp ( as per taste )
Jaggery : 1/2 tsp
Vegetable oil : 2 tsp
Cumin seeds : 1 tsp
Turmeric powder : 1/2 tsp
Hing : 1/4 tsp
Goda masala :2 tsp
Garam Masala : 1 tsp
Coarse pea nut powder : 2 tsp
Chopped coriander for garnishing.

Recipe :
1. Add  oil in a heavy bottom pan or kadhai.
2. Add cumin seeds when oil becomes hot. Add hing & turmeric powder.
3. Add green chilli, garlic in the oil. Saute for a minute.
4. Add  onoin & Stir the mixture properly till onion becomes soft.
5. Add baigan, mix & add little water & cover the pan till it becomes soft.
7. Add boiled beans & potato. Goda masala,salt, jaggery, garam masala & peanut powder.
8. Mix properly, add some water & cover the pan & let it cook for some time. Add water if required.
9. Garnish with chopped coriander.
      Enjoy this tasty  bhaji with bhakri or roti.

Fresh raw haladi ( oli halad ), Amba halad & Ginger pickle

 Healthy winter special pickle!!!







Ingredients :
Grated Raw fresh Haladi ( oli halad ) : 1 cup
Grared Amba Halad (white Turmeric or Mango ginger ) : 1/2 cup
Grated ginger : 1/4 cup
Coarsely ground Green chilli : 2 tsp
Red chilli powder : 2 tsp
Fenugreek powder : 1/2 tsp
Lemon juice : 1/4 cup ( 2 big lemons )
Vegetable oil : 4 tsp
Mustard seeds : 1/4 tsp
Yellow mustard dal : 1 tsp
Hing : 1/4 tsp
Turmeric powder : 1/4 tsp
Salt : 1 tsp or as per taste

Recipe :
1. Mix grated raw haldi, amba haldi, ginger & Green chilli.
2. Add salt, yellow mustard, fenugreek powder  & red chilli powder. Mix well & Keep aside.
3. Heat oil in tadka pan. Add mustard seeds.
4. When mustard seeds crackle add turmeric powder & hing. Turn off the gas.
5. Let it cool completely.
6. When tadka cools down add it to above mixture. Add lemon juice.
8. Mix well.
9. Store in a airtight glass container.
10.Enjoy this mouth watering pickle with phulka or rice.

Keep the pickle in refrigerator as it does not last long.



Stuffed & baked Sweet corn & spinach buns

Ingredients :
All purpose flour ( maida) : 1/2 cup
Whole wheat flour : 1/2 cup
Dry yeast : 1 tsp ( I used Blue Bird )
Normal sugar : 1 tsp ( to activate the yeast)
Salt : 1/4 tsp
Olive oil : 4 tsp
Warm water : 1/2 cup
Sesame seeds : 2 tsp
Grated cheese : 4 tsp

For Stuffing : 
Boiled & coarsely ground Sweet corn : 3/4 cup
Chopped Spinach : 3/4 cup
Mashed potato : 1/4 cup
Green chilli paste ; 1 tsp
Garlic paste : 1 tsp
Ginger paste : 1/2 tsp
Garam Masala : 1 tsp
Salt : 1 tsp or As per taste.
Vegetable oil : 2 tsp
Add oil in a pan. Turn on the gas. Add chilli, garlic & ginger paste one by one & roast nicely. Add spinach. Sauté for 2 minutes. Add corn & mashed potato. Add salt & garam masala. Mix properly. The mixture should be dry. Keep aside to cool down.  

Recipe :
1. Take yeast & sugar in bowl.
2. Add warm water in yeast & sugar mixture.
3. Keep aside for 5 minutes.
4. You will observe bubbles & mixture will be fluffy.
5. Add salt & olive oil. Sieve maida & whole wheat flour . Mix to make a nice dough.
6. Transfer the dough on clean greased platform. Knead the dough about 10 min. till it becomes elastic. Use little maida or oil while kneading if needed.
7. Prepare a soft dough  & keep in a big bowl .Cover the bowl  . Let it rest for 1 hour.
8. After 1 hour the dough will be double of original size.
9.  Punch the dough & again knead for about 10 minutes.
10. Prepare small buns stuffing with cheese, sweet corn & spinach mixture.
11. Arrange the buns on baking tray. Keep the tray for about 1 hour.
12. Bake the buns in preheated oven at 200 for 10 minutes or till it turns brown.
Above measurement yields about 9 small buns..    
Enjoy hot home made soft  delicious stuffed buns with tomato ketchup.
