You will observe bubbles & mixture will be fluffy.</div><div class="p3">5. Add salt, melted butter, wheat flour, milk powder & maida . Knead the dough about 10 min. till it becomes elastic.Use oil as required. 3 tsp will be good enough. </div><div class="p2">7. Prepare a soft dough & keep in a big bowl .Cover the bowl . Let it rest for 1 hour.<br />8. After 1 hour the dough will be double of original size.</div><div class="p2">9. After 1 hour punch the dough & again knead for 2-3 minutes.<br />10. Prepare the shape of the loaf in a greased loaf pan. Here I used round mould.<br />11. Again keep it for proving till it doubles.<br />12. After proving apply little water on the top so that it will not be dry.<br />13. Sprinkle sesame seeds on the top if you like. You can use oats or mixed herbs also.<br />14. Bake the loaf in preheated oven at180 C for 25 to 30 minutes or till it turns brown.<br />15. <i>5. Add water gradually. You may not require all 1 1/4 cup of water.Mix to make a nice dough.</i><br />
<i>6. The dough should not be very tight. It should be loose as semolina absorbs more water than all purpose flour.Transfer the dough on clean greased platform. Knead the dough about 10 min. till it becomes elastic.Use oil as required. 3 tsp will be good enough for greasing also. </i></div>

Chana Dal ( chickpea ): 2 Cups</div>

Grated green mango : 1 cup ( choose Totapuri green mango which is not very sour )<br />
green chilli paste : 2 tsp<br />
Curry leaves : 10-12<br />
Salt : 1 tsp or as per taste<br />
Sugar : 1/2 tsp<br />
Chopped coriander : handful<br />
Vegetable oil : 4 tbsp<br />
Mustard seeds : 1 tsp<br />
Cumin seeds : 1/2 tsp<br />
Hing : 1 tsp<br />
Turmeric powder : 1/2 tsp<br />

1. Soak chana dal in water for 4-5 hours. Drain the water. Grind the soaked dal coarsely.</div>

2. Add green chilli, grated green mango & salt in the ground chana dal. Mix properly. Keep aside.<br />
3. Add oil in a thick bottom pan.When oil becomes hot add mustard seeds, cumin seeds, turmeric powder & hing one by one. Add curry leaves.<br />
5. Let it cool. Then add in the chana dal mixture. Mix everything properly.<br />
6. Add coriander leaves & mix.</div>

Green mango pulp : 1 cup ( choose Totapuri green mango which is not very sour )<br />
I took 2 totapuri green mangoes.</div>

Jaggery ( gul ) : 1 cup ( finely chopped)<br />
Salt : 1 tsp or as per taste<br />
Cardamom powder : 1 tsp<br />
Saffron threads : 10-12 threads<br />

<b><i>Recipe :</i></b></div>

1. Remove the skin of green mangoes. Soak the saffron threads in 1 tsp of hot water.</div>

2. Take the mangoes in a vessel. Add jaggery in the same.<br />
3. Pressure cook the mango jaggery mixture for 3 whistles.<br />
4. Let it cool. Remove the seeds of mango. grind the mango pulp with jaggery to fine paste.<br />
5. Add cold water & adjust the consistency like sharbat or as you like. Add more jaggery if required.<br />
6. Add cardamom powder, soaked saffron in the above mixture.<br />
7. Mix everything properly.<br />

11. Bake the kulcha in preheated oven at 180 C for 10 minutes or till light brown .<br />
15. Apply butter on the kulcha when it is hot. Keep in the basket covered with napkin.<br />

1. In a heavy bottom pan add oil. On the gas stove.<br />
2. When oil becomes hot add mustard seeds, cumin seeds, turmeric powder & hing one by one.</div>

3. Add green chilli & curry leaves. Add onion & cook it till soft.<br />
4. Bhajni is prepared with all roasted cereals. so it is directly added in above mixture. No need of roasting like suji.<br />
5. Mix everything properly.<br />
6. Add salt, sugar & lemon juice.</div>
8. Add 1/2 cup of water. Mix properly. Then add remaining water if required.<br />
9. Cover the pan with lid. After 5 minutes open the lid, sanja should not be sticky.<br />
10. Turn off the gas. Garnish with coriander & fresh coconut.<br />

For filling :<br />
Grated gul ( jaggery ) : 2 cups ( about 1 kg )<br />
roasted sesame seeds : 1/2 cup<br />
Roasted besan : 1/2 cup<br />
Roasted dry coconut : 1/4 cup<br />
Roasted Khaskhas ( poppy seeds ) : 1/4 cup<br />
Desi ghee : 4 tbsp<br />
Elaichi/ jaiphal powder : 1 tsp<br />

<b><i>Recipe for gul:</i></b><br />
1. Grate jaggery & keep aside.<br />
2. Dry roast sesame seeds, coconut & poppy seeds seperately.<br />
3. Dry roast besan adding some desi ghee.<br />
4. Mean while grind roasted sesame seeds, coconut & poppy seeds with elaychi powder.<br />
5.Add this mixture with besan in the grated jaggery .<br />
6. Knead this mixture till it becomes smooth & soft. Add ghee while kneading.<br />
<br />
For outer cover:<br />
Ata : 3 cups<br />
Oil : 5 tsp<br />
Salt : 1 pinch<br />
Water : 3/4 cup or as required<br />
Mix all the ingredients & prepare a smooth dough like chapati dough.<br />
Prepare 60 equal balls of lemon size. This measurement yields about 30-32 gul polis depending upon the size. You can prepare the size you like .<br />
Take 2 balls, roll them in puri size & fill the gul stuffing in between 2 polis. Take same size of gul & roll in puri size & then fill in between puries. Pack nicely gul filling in between & then roll the poli in bigger size. Cut the sides with pizza cutter. Roast on non stick pan both sides. <br />
<br />
Enjoy this delicious gul poli with dollops of ghee. It is very convenient to carry these rotis while travelling. It lasts about 15 days.<br />

1. Soak daliya & rajgiraseeds for 2 hours & urad dal for 4-5 hours in a different bowls.<br />

2. Soak pohe in just enough water in another bowl for 15 minutes before grinding above ingredients.<br />

3. Drain water after 4 hours. But do not throw it. Use it for grinding.<br />

Heat the oil in a pan . Add mustard seeds, cumin seeds, asafoetida & curry leaves.<br />
Let it cool for some time. Tempering is optional as per individual taste. I prepare plain idlis.<br />

Boil full fat milk. Cool it & keep in refrigerator. A thick layer of cream is formed on the surface of the milk. Like wise I store daily cream formed over my 2 litres of the milk in fridge. When sufficient cream is collected ( from about 6 litres of milk ) add 2 tsp of yogurt or 1/4 th cup of butter milk in the cream. Keep it overnight. Cream yogurt is formed in the morning. Churn it with hand whisker ((wooden ravi). I preferably prepare with my wooden whisker. In 5 minutes you will get butter over the cream. Add cold water & take out the butter in a heavy bottom pan if you want to prepare ghee. I get about 1/2 kg of butter out of this cream. You can use the tasty butter itself or prepare ghee out of butter. Keep the pan on gas stove on low flame. In 15 minutes you will get nice aromatic ghee.<br />
Liquid below the butter is butter milk. It is very healthy & tastes yummy.<br />

In a pot take about 1/2 litre of warm milk. Add 1 tsp of yogurt & mix properly. Keep the pot in warm place. In mumbai I get thick yogurt in 3-4 hours. Adjust the quantity of yogurt in the milk as per the season & place where you are living.<br />

3. On another gas stove boil milk,water with jaggery, jaiphal powder & elaichi powder.</div>

4. Milk will curdle but doesn't matter. Add this mixture to ragi n suji mixture.</div>

6. Mix it properly & cover the pan. Keep it on low flame till all milk & water mixture evaporates. </div>

Boiled & coarsely ground fresh green peas :2 cup ( Frozen can be used )<br />
Mashed potato : 1/2 cup<br />
Fresh grated coconut : 1/2 cup ( Frozen can be used )<br />
Green chilli paste ; 1 tsp<br />
Garlic paste : 1 tsp<br />
Ginger paste : 1/2 tsp<br />
Garam Masala : 1 tsp<br />
Salt : 1 tsp or As per taste.<br />
Vegetable oil : 2 tsp<br />
Roasted cumin powder : 1/2 tsp<br />
Lemon juice : 1 tsp<br />

Add oil in a pan. Turn on the gas. Add chilli, garlic & ginger paste one by one & roast nicely. Add boiled & crused peas & mashed potato. Add salt,cumin powder & garam masala. Add lemon juice. Mix properly. The mixture should be dry. Keep aside to cool down.<br />

In a big bowl mix together whieat flour, maida, salt & baking powder. Add oil. With the help of water prepare a medium soft smooth dough. Keep it covered & let it rest for 2 hours.</div>

Add melted ghee in corn flour. With the help of hand mix both thoroughly till you get creamy smooth texture. Add more ghee if required. The consistency should be like cream.</span><br />
<span style="background-color: white; color: #444444; font-family: "open sans"; font-size: 15px;">After 2 hours prepare 3 bases like thick chapati. Spread corn flour ghee mixture on each base.</span><span style="background-color: white; color: #444444; font-family: "open sans"; font-size: 15px;">Roll tightly all three & cut into pieces as the size of karanji you want. Roll each piece with pin & fill with stuffing.</span><br />
<span style="background-color: white; color: #444444; font-family: "open sans"; font-size: 15px;">Bake the karanjis @ 180C for 10-15 minutes.</span><br />

Amla pieces boiled & cut in small pieces : 1 cup ( about 6 amlas )<br />
Vegetable oil : 4 tsp<br />
Ready lemon pickle masala : 2 tsp<br />
Sugar : 1/2 tsp<br />
Red chilli powder : 1 tsp<br />
Turmeric powder : 1/2 tsp<br />
Salt : 1 tsp or as per taste<br />
Mustard seeds : 3/4 tsp<br />

<b><i>Recipe :</i></b><br />
1. In a pan add 1 cup of water & start boiling it.<br />
2. Add wholes amlas & keep on boiling for about 10 min. or till amlas become soft.<br />
3. Turn off the gas & let them cool. After cooling cut into small pieces.<br />
4. In a pan add oil. Add mustard seeds, hing & turmeric powder when oil becomes hot.<br />
5. Add amla pieces, saute for a minute & turn off the gas.<br />
6. Add masala, red chilli powder, salt & sugar. Mix well.<br />
7. Yummy pickle is ready.<br />
8. Let it cool & keep in glass container.<br />

<b><i>Ingredients : For morabba</i></b><br />
Grated amla : 1 cup<br />
Sugar : 1/2 cup<br />
Jaggery : 1/2 cup<br />
Cinnamon : 1 piece ( 1 inch )<br />
Cloves : 2-3<br />
Cardamom powder : 1/2 tsp<br />

<b><i>Recipe :</i></b><br />
1. Add grated amla , sugar, & jaggery in a pan.<br />
2. Turn on the gas.<br />
3. Mixture will be watery as sugar & jaggery melts. Add cinnamon & cloves. Let the mixture become thick. Turn of the gas. Add cardamom powder. Mix well & it is ready.<br />
4. Let it cool & keep in glass container.<br />

<li>Add peanut powder & sesame seeds </li>
