Small sweet & soft buns ( Bun pav)

These small sweet buns are good for tea time!! !! Also snack for children! 




Ingredients :
All purpose flour ( maida) : 3/4 cup
Whole wheat flour : 1/4 cup
Dry yeast : 1 tsp ( I used Blue Bird )
Normal sugar : 1 tsp ( to activate the yeast)
Powdered Sugar : 2 tsp
Salt : 1/4 tsp
Desi ghee or butter : 3 tsp
Warm Milk : 1/2 cup
Warm water : 1/2 cup
Tuty fruity : 2 tsp

Recipe :
1. Take yeast & sugar in bowl.
2. Add warm milk in yeast & sugar mixture.
3. Keep aside for 5 minutes.
4. You will observe bubbles & mixture will be fluffy.
5. Add powdered sugar, salt, melted butter or ghee. Sieve maida & whole wheat flour . Mix to make a nice dough.
6. Transfer the dough on clean greased platform. Knead the dough about 10 min. till it becomes elastic. Use little maida or ghee while kneading if needed.
7. Prepare a soft dough  & keep in a big bowl .Cover the bowl  . Let it rest for 1 hour.
8. After 1 hour the dough will be double of original size.
9. After 1 hour punch the dough & again knead for about 10 minutes. Add tuty fruity in the dough.
10.Arrange the bun  pavs making round shape on a greased tray keeping distance of about 1 inch.
11.Again keep the tray for about 1 hour.
12. Bake the pavs in preheated oven at 200 for 10 minutes or till it turns brown.
Above measurement yields about 9 small buns..    
Enjoy hot home made soft  delicious buns with hot tea or eat like that !!

Crispy jeera thins

Ingredients :
All purpose flour ( maida) : 1 cup
Butter : 4 tsp 
Salt : 1/4 tsp
Plain yoghurt ( dahi ) : 3 tsp
Cumin seeds : 1 tsp ( I used shahi jeera) can use normal cumin seeds

Recipe :
1. Add maida, salt, butter, yoghurt & cumin seeds in a bowl. Crush cumin seeds on hand for a while so that it will give good aroma.
2. Knead the dough to mix all the ingredients properly.
3. Do not over knead the dough.
4. Keep aside for 5 minutes.
5. Roll the dough like roti .
6. Cut in the shape as you like with cooky cutter.  
7. Bake the jeera thins  in preheated oven at 160 C for 5 to 7  minutes or till it turns light brown.
8. Adjust the tempeture as per your oven.
Above measurement yields about 30 medium sized buiscuits.
    
Enjoy with hot ginger tea or coffee. Also very good home made snack for children . 


Suji and coconut burfi without ghee in microwave oven

Ingredients :
Fine Suji ( rawa) : 1 Cup
Grated fresh coconut : 1 1/2 Cup 
Milk powder   : 1 Cup
Fresh Cream : 1 cup ( I used fresh cream from home which comes above milk after boiling& it was cow milk.)
Powdered sugar : 1/3 cup
Elaychi powder  : 1/2 tsp
Saffron :  5-6 threads
Chopped roasted almonds : 2 tsp
Chopped pistachios : 2 tsp
Desi Ghee : for greasing tray

Recipe :
1. Dry roast suji, in a microwavable bowl. It takes 3-4 minutes. After every minute take bowl outside stir & again microwave. Repeat the same procedure. Do not over roast. It should not look brown. Keep aside.
You can dry roast in kadhai or heavy bottom pan also. But microwave is easier.
2. In another microwavable bowl take fresh cream & milk powder.
3. Mix properly.There should not be lumps. I mixed with hand whisker.
4. Microwave for 2 minutes.Again give a good stir. Microwave for 1 minute. 
5.Add sugar, fresh  coconut, elaichi powder & saffron threads.
6. Mix it properly & again microwave for 1 minute.
7. Now in this mixture add roasted suji & mix.
8. Again microwave till mixture becomes thick. After every 1 or 2 minutes take bowl outside & stir. It will take about 4-5 minutes. Thus all the process takes about 10 to 15 minutes.
9. Transfer the mixture to a greased tray when it becomes thick . Spread evenly & garnish with chopped almonds & pistachios. Let it cool.
10. Keep in the refrigerator for an hour & cut into pieces as you like. Because of cream & milk powder burfi tastes like mawa burfi.
 Enjoy this divine tasting healthy burfi!

You can prepare this burfi without microwave oven also. Dry roast suji in 3 tsbp desi ghee in heavy bottom pan  & follow the remaining procedure. You have to prepare on gas stove. It will take little more time.






Eggless bread crumbs, dates & walnut cake

Ingredients :
Bread crumbs : 1 1/2 cup ( I used wheat bread crumbs )
Keep wheat bread loaf in refrigerator.It will become dry. Then grind it in mixer. Your bread crumbs will be ready!!
All purpose flour ( Maida ) : 1/2  cup
Black dates ( khajur ) : 3/4 cup
Roasted Walnuts : 1/2 cup
Tuti fruity : 2 tsp
Brown Sugar : 2 tbsp ( Normal sugar can be used)
Warm milk   : 3/4 cup
Desi ghee or butter : 1/4 cup  ( odourless vegetable oil can be used )
Baking Powder : 3/4  tsp
Vanilla essence : 1 tsp

Recipe :
1. De seed dates & Soak in warm milk for 1/2 hour.
2. After 1/2 hour grind dates with milk .
3. Add vanilla essence, brown sugar & baking powder in the above mixture. Grind once again to mix properly.
4. In a big bowl add bread crumbs & maida. Add melted butter, tuty fruity & walnut pieces.
5. Add the mixture of dates , milk etc in bread crumbs & maida. Mix gently.
6. Bake the cake in greased tin in oven at 180 C for 35 minutes.
If you have sweet tooth you can add more sugar.
Decorate with  some tuty fruity pieces & enjoy the moist delicious cake.

Super soft & tasty pavs !! Enjoy Pav bhaji or Vada pav. Even famous maska pav.



Ingredients :
All purpose flour ( maida) : 3 cups
Whole wheat flour : 2 cups
Milk powder : 2 tbsp
Active Dry yeast : 1 tsp
Sugar : 2 tsp
Salt : 3/4 tsp
Butter : 2 tbsp
Vegetable oil : 4 tsp ( for kneading & greasing )
Warm water : 2 cups

Recipe :
1. Take maida, whole wheat flour, milk powder, sugar & salt in a large bowl. Whisk it properly with a spatula.
2. Add yeast, butter & 1 cup warm water in the mixture.
3. Mix all the ingredients properly.
4. Add water slowly. I require 2 cups of water.
5. Mix to make a nice dough.
6. Transfer the dough on clean greased platform. Knead the dough about 10 min. till it becomes elastic.Use oil as required. 4 tsp will be good enough for greasing also.  
7. Prepare a soft dough  & keep in a greased bowl .Cover the bowl  . Let it rest for 1 hour.
8. After 1 hour the dough will be double of original size.
9. After 1 hour punch the dough & again knead for about 10 minutes.
10.Arrange the pavs on a greased tray keeping distance of about 1 inch.
11.Again keep the tray for about 1/2 to 1 hour.
12. Bake the pavs in preheated oven at 200 C for 10 minutes or till it turns brown.
Above measurement yields about 24 medium sized pavs.
