Stuffed mirchi ( chilli )

Tasty & spicy stuffed mirchi !!




Ingredients :
Raw green mirchya ( chillis ) : 7
Oil : 2 tbsp

For stuffing :
Besan : 1/2 cup
Finely chopped onion : 1/4 cup
Garlic paste : 1 tsp
ginger paste : 1/2 tsp
Chopped coriander : 3 tsp
Red chilli powder : 3 tsp
Cumin seeds : 1/4 tsp
Hing : 1/4 tsp
Turmeric powder : 1/2 tsp
Amchur powder : 1/2 tsp
Salt : 1 tsp or as per taste
Sugar : 1/2 tsp
Oil : 3 tsp
Water : 2 tsp

Recipe :
1. Wash the chillies & give a cut in the middle of green chilli. Keep aside.
2. Heat oil in heavy bottom pan.
3. Add cumin seeds, hing & turmeric powder.
4. Add garlic, ginger paste, chilli powder. Saute for a minute.
5. Add onion,salt & sugar. Mix well till onion becomes little soft.
6. Add besan & amchur.
7. Mix well. Sprinkle water & again mix thoroughly.
8. Let the stuffing cool down..
9. Fill all the chillies with this tasty stuffing.
10. Add 2 tsp oil in a heavy bottom pan. Turn on the gas & place stuffed chillies in the oil when it becomes hot. Cook on very slow flame by covering the pan. It will take 5 to 10 min. only.
10.Enjoy this mouth watering stuffed chillies with phulka or rice.


Eggless Chocolate & Orange cake

Very tasty& flavourful cake !!


Ingredients :
All purpose flour ( maida )  : 1 cup ( 250 ml cup )
Chocolate powder : 4 tsp
 Powdered sugar  : 1/2 cup
Orange juice : 1/2 cup ( I used fresh orange juice )
Orange zest : 1 tsp
Water : 1/4 cup or as required for consistency
Any odourless vegetable oil : 1/4 cup
Baking Powder : 1 tsp
Baking soda : 1/4 tsp
Lemon juice : 1 tsp
Salt : small pinch

Recipe :
1.Sieve all dry ingredients maida, chocolate powder, baking powder, baking soda & salt in a big bowl.
    Mix well & keep aside.
2. Take oil & sugar in another bowl & mix well with hand mixer. When sugar dissolves completely add orange juice. Mix well. Add orange zest.
3 Add this mixture  into dry ingredients & fold the mixture properly. There should not be lumps.
4. Add water as required till the batter is dropping consistency. Add lemon juice & mix gently.
5. Pour the batter in greased baking tin.
6. Bake the cake in preheated oven at 170 C for 25-30 minutes.
7. Cut into pieces and enjoy this delicious and flavourful cake with tea.

Eggless Dark Chocolate and Coffee Cake

Soft and moist Eggless Dark Chocolate and Coffee cake




Ingredients :
All purpose flour ( maida )  : 1 cup
Grated Chocolate  : 3/4 cup  ( Used Amul dark chocolate )
Coffee : 3 tsp ( Any instant coffee )
Chopped Walnuts : 1/4 cup
Golden & black raisins : 2 tsp
 Powdered sugar  : 1/4 cup
Water : 1/4 cup
Warm milk   : 3/4 cup
Any odourless vegetable oil : 1/4 cup
Baking Powder : 1 tsp
Baking soda : 3/4 tsp
Vanilla essence : 1 tsp
Lemon juice : 1 tsp

Recipe :
1. Add chocolate in a big bowl.
2. Turn on the gas & melt the chocolate with double boiler method.
3. When all the chocolate melts turn off the gas. Let it cool.
4. Melt the coffee in 1/4 cup of warm water & add to melted chocolate.
5. Add oil, sugar & vanilla essence in the  chocolate mixture & mix well. Add chopped walnuts & raisins.
6. Sieve maida, baking soda & baking powder in the above mixture.
7. Incorporate maida with the above mixture properly. The mixture should become thick.
8. Add milk & mix well. Consistency will will be smooth & silky.
9. Add lemon juice. This is very important step. Because of the lemon juice, the baking soda & baking powder react well together. Mix gently.
10. Pour the batter in a greased mould.
11. Bake the cake preheated oven at 180 C for 25 minutes.

Cut in small pieces & enjoy this chocolatey, moist delicious cake.

Corn, Beet root, Cheese savory muffins

                                               Tasty & healthy corn muffins !!



Ingredients :
Boiled sweet corn : 1 cup
Boiled beet root cut in small cubes : 1/2  cup
Potato cut in small cubes like beet root : 1/2 cup
All purpose flour ( maida ) : 4 tbsp
Milk : 1/2 cup
Chopped coriander : handful
Cheese : 1/4 cup
Butter : 2 tsp
Mixed herbs : 1 tsp
Red chilli flakes : 1 tsp
Salt : 1/2 tsp or as per taste
Eno fruit salt : 1 tsp

Recipe :
1. Mix corn, beet root & potato cubes.   
2.Add cheese, butter, salt, mixed herbs & chilli flakes. Mix properly.
3. Add maida & milk. Make the mixture homogeneous. 
4. Lastly add eno powder & mix well.
5. Fill in the silicon moulds.
6. Bake the muffins in preheated oven for 20-25 min at 200 C.
8. Adjust the temperature & time as per your oven.

Serve hot with tomato ketchup or green chutney.
