Carrot n nuts cake

Soft & moist carrot & nuts cake with home made condensed milk !!




Ingredients :
All purpose flour ( maida ) : 1 cup
Whole wheat flour : 1/4 cup
Grated carrot : 1 & 1/2 cup
Sugar : 1/4 cup. If you have very sweet tooth then add more.
Condensed milk : 1/2 cup
Butter : 1/2 cup
Warm Milk  : 1/2 cup or (as required)
Thick yogurt : 2 tbsp
Dry fruits as per individual taste. ( I used  Almonds & Walnuts )
Cinnamon powder : 1 tsp
Jayphal (Nutmeg) : 1/2 tsp
Vannila essence : 1/2 tsp
Baking Powder : 1 tsp
Baking soda: 1/2 tsp
White vinegar : 1/2 tsp
Chopped almonds: 1/2 cup
Chopped walnuts : 1/4 cup
Tuty fruity : 1 tsp ( optional )

Recipe :
  1. In a bowl sieve together maida, wheat flour, baking powder & baking soda. Then add cinnamon powder & jaiphal powder. Mix well. Keep aside. 
  2. Take another bowl. Add butter & sugar. Mix well. Add condensed milk & yogurt. Mix nicely to form light mixture. Mixture will look curdled because of yogurt. Does not matter. Add vanilla essence.
  3. Add all dry ingredients mixture step by step. Fold the mixture gently. Add grated carrot. Add milk required & adjust the consistency.
  4. Add chopped walnuts.Mix & prepare smooth batter.
  5. Grease cake pan with butter or oil. Add batter in the pan.Top up the cake batter generously with almond slices.
  6. I prepared cup cakes also. Top with almond slices & tuty fruity.
  7. Bake the cakes at 180 C for 20 to 25 minutes.
         Enjoy this lovely flavoured heavenly cake with a cup of coffee !!

Cake with Gulab jamun mix

Ingredients :
Gulab jamun mix powder : 3/4 cup ( I used Gits 100 gm mix )
All purpose flour ( Maida ) : 3/4  cup
Powdered Sugar : 3/4 cup  ( If you want  more sweetness add 1 cup )
Fresh cream or milk : 1 cup ( I used home made fresh cream )
Chopped cashews : 2 tsp ( optional )
Any odourless oil : 1/4 cup
Baking Powder : 1/2  tsp
Baking Soda     : 1/4 tsp
Vanilla essence : 1 tsp

Recipe :
1. Add Gulab jamun mix powder & powder sugar in mixer jar & mix it throughly. 
2. Sieve maida,baking powder  & baking soda in a big bowl. 
3. Add gulab jamun mix & sugar mixture in above mixture. Add cashews. Mix well. 
4. Add  fresh cream also in mixer jar & mix well.
5. Add this cream in all the dry ingredients & fold gently. There should not be lumps. Add oil & mix well.
4. Bake the cake in greased tin in oven at 180 C for 35 minutes.
This cake tastes awesome, soft & delicious. 
 Enjoy it with tea or coffee!!! 

strawberry & banana cake with Ragi flour

Ingredients :
Ragi flour : 1  Cup
All purpose flour ( maida )  : 1/2 Cup
Fresh sliced strawberries : 3/4 cup
Chopped Banana : 1/2 cup
Powdered sugar : 3/4 cup
Yogurt ( plain Dahi ) : 1/2 Cup
Baking powder: 1 tsp
Baking soda : 1/4 tsp
White vinegar : 3/4 tsp
Vegetable oil or butter  : 1/4 cup
Vanilla Essence : 1 tsp 

Recipe :
1. Take sugar, sliced strawberries & banana in bowl. Mix together & keep aside.
2. Sieve ragi flour, maida, baking powder & baking soda in a big bowl.
3. Mix all the dry ingredients well.
4. In strawberry, banana & sugar mixture add yoghurt, vanilla essence & oil.   Mix well. 
5. Add dry ingredients mixture slowly in the wet mixture. Mix gently. There should not be lumps. Add white vinegar. Mix well.
6. Grease the tin with little oil. Keep butter paper in the tin & again grease on butter paper. Pour the cake batter in a greased tin.
7. Bake the cake in pre heated oven for 25 to 30 minutes at 180 C. 
8. Cut into pieces as you like & enjoy !!.

Eggless Christmas Fruit cake

Moist & soft easy egg less & alcohol free Christmas cake!! 



Ingredients :
All purpose flour ( Maida ) : 1 1/4  cup
Baking powder : 3/4 tsp
Baking soda : 3/4 tsp
Brown sugar : 3/4 cup
Plain yoghurt ( Dahi)  :  1/2 cup
Hot milk   : 1/4 cup
Orange juice : 3/4 cup ( I used fresh orange juice but store bought juice can be used)
                                     ( Apple juice can be used)
Butter : 1/2 cup ( I used salted Amul butter )
Black seedless raisins : 3/4 cup
Golden raisins : 3/4 cup
Chopped walnut : 1/2 cup
Chopped cashew : 1/4 cup ( optional )
Tuty fruity : 1/2 cup
Chopped Glazed cherries : 2 tsp
Orange zest : 1/2 tsp
Lemon zest : 1/2 tsp
Cardamom powder : 1/4 tsp
Cinnamon powder : 1 small pinch
Clove powder : 1 small pinch ( 1 clove )  
Vanilla essence : 1 tsp

Soaking of fruits :
In a bowl take black raisins,golden raisins, walnuts, cashews, glazed cherries & tuty fruity. Any other dry fruits like apricot can be used. Add orange juice in the fruits & soak for 3-4 hours or if you have time then soak overnight.
Before starting to prepare cake drain the soaked fruits & keep aside.

Recipe :
1. Sieve maida, baking powder & baking soda in a bowl. Keep aside.
2. In another bowl take soften butter & brown sugar. Mix well with hand whisker till it becomes fluffy.
 Add yoghurt , hot milk & vanilla essence. Add cardamom powder, cinnamon & clove powder.   Again mix well. Mixture looks curdled. But does not  matter.  
3. Add maida mixture slowly & fold gently. Add orange & lemon zest.
4. Add soaked fruits, mix well. Add also orange juice after draining fruits.
5. Pour the batter in a greased mould & bake in preheated oven at 180 C for 30-35 minutes.
Enjoy this moist & soft cake which requires very less soaking time.


Cake for fast ( Upasacha cake )

Ingredients :
Amaranth Flour ( Rajgira ata ) : 3/4 cup
Barnyard Millet ( Vari or Bhagar ata ) : 3/4  cup
Water Chest nut Flour ( Singhareka ata) : 1/4 cup
Fresh  coconut : 1/2 cup ( Desiccated coconut can be used )
Ripe mashed banana : 1 cup ( I have used 3 large bananas )
Powdered Sugar : 1/2 cup ( Add more sugar if you want more sweetness )
Plain yoghurt ( Dahi)  :  1/2 cup
Warm milk   : 3/4 cup
Desi ghee  : 4 tsp
Elaychi powder : 1/2 tsp
Baking Powder : 1  tsp
Baking Soda     : 1/4 tsp
Almond slices : 3 tsp

Recipe :
1. Sieve rajgira ata, vari ata, singhara ata, baking powder & baking soda.  Mix all the dry ingredients well.  Keep aside.
2. In another bowl add mashed banana, desi ghee, sugar, yoghurt & mix throughly.
3. Add elaychi powder & coconut. Mix well.
4. Add the mixture of dry ingredients slowly. Start adding milk as required. Add dry mixture & milk alternately till all the mixture is finished & you get required batter consistancy. Adjust milk quantity accordingly.
5. Pour the mixture in a greased tin.Decorate the top of the cake batter with almond slices.
6. Bake the cake in oven at 180 C for 25 minutes.
You can bake the cake in cooker or on gas stove using non stick pan.
This cake turns out little moist & tastes heavenly.

Cut & enjoy this delicious cake.

Beet root, Coconut , chocolate cake with Ragi flour

Ingredients :
Ragi flour : 1  Cup
All purpose flour ( maida )  : 1/4 Cup
Beet root pulp : 3/4 cup
Desiccated coconut : 1/2 cup
Chocolate powder : 2 tsp
Powdered sugar : 3/4 cup
Low fat Cream : 1/2 cup ( optional ) Milk can be used instead
Yogurt ( plain Dahi ) : 1/2 Cup
Baking soda : 1/4 tsp
Baking powder: 1 tsp
Vegetable oil or butter  : 1/4 cup
Vanilla Essence : 1 tsp 

Recipe :
1. Pressure cook beet root  for 3 whistles. Let it cool.Peel off the skin. Grate it or grind it to make pulp. Keep aside.
2. Sieve ragi flour, maida, chocolate powder, baking powder & baking soda in a big bowl.
3. Add coconut into this mixture. Mix all the dry ingredients well.
4.In another bowl add sugar, Yoghurt & cream & mix well till it becomes fluffy. You can add milk instead of cream.
5.Add oil & vanilla essence. Mix well.
6.Add dry ingredients mixture slowly in the wet mixture. Mix gently. There should not be lumps.
7.. Grease the tin with little oil. Keep butter paper in the tin & again grease on butter paper. Pour the cake batter in a greased tin. 
8. Bake the cake in pre heated oven for 25 to 30 minutes at 180 C.
9. Cut into pieces as you like & enjoy !!.
