Instant Amla ( Gooseberry ) pickle & Amla Morabba

 It is the season to get fresh amlas in the market. Can't stop myself to purchase some. Prepared instant amla achar & morabba too! Both tastes yummy & healthy too ! Very simple & easy recipes!




Ingredients : For pickle
Amla pieces boiled & cut in small pieces :  1 cup ( about 6 amlas )
Vegetable oil :  4 tsp
Ready lemon pickle masala : 2 tsp
Sugar : 1/2 tsp
Red chilli powder : 1 tsp
Turmeric powder : 1/2 tsp
Salt : 1 tsp or as per taste
Mustard seeds : 3/4  tsp

Recipe :
1. In a pan add 1 cup of water & start boiling it.
2. Add wholes amlas & keep on boiling for about 10 min. or till amlas become soft.
3. Turn off the gas & let them cool. After cooling cut into small pieces.
4. In a pan add oil.  Add mustard seeds, hing & turmeric powder when oil becomes hot.
5. Add amla pieces, saute for a minute & turn off the gas.
6. Add masala, red chilli powder, salt & sugar. Mix well.
7. Yummy pickle is ready.
8. Let it cool & keep in glass container.

Ingredients : For morabba
Grated amla :  1 cup
Sugar : 1/2 cup
Jaggery : 1/2 cup
Cinnamon : 1 piece ( 1 inch )
Cloves : 2-3
Cardamom powder : 1/2 tsp

Recipe :
1. Add grated amla , sugar, & jaggery in a pan.
2. Turn on the gas.
3. Mixture will be watery as sugar & jaggery melts. Add cinnamon & cloves. Let the mixture become thick. Turn of the gas. Add cardamom powder. Mix well & it is ready.
4. Let it cool & keep in glass container.

Enjoy both with phulka, bread or rice.

Pl note these recipes will not last long. Keep in fridge upto10 days.

Instant Lemon & black raisins sweet n sour pickle ( lonche )

Tasty sweet n sour pickle !!


Ingredients :
 Lemons cut into 8 pieces :  1 cup ( about 6 lemons )
Black raisins : 1/3 cup
Sugar : 1/2 cup or little more as per your taste
Red chilli powder : 1 tsp
Turmeric powder : 1/4 tsp
Roasted & coarsely powdered cumin seeds : 1/2 tsp
Salt : 1 tsp or as per taste
Water : 2-3 tsp

Recipe :
1. Cut the lemons, deseed &  make 8 pieces of each lemon.
2. Mix lemon pieces, sugar & salt in a stainless steel vessel. Add 2-3 tsp water.
3. Mix well & pressure cook the mixture upto 3-4 whistles.
4. When pressure cooker cools down take off the vessel. Mixture becomes watery as sugar & salt dissolve.
5. Transfer the mixture in a heavy bottom pan. Add raisins. Mix well & Turn on the gas.
6. Let it cook for about 5 minutes.
7. Add red chilli powder & cumin powder. Taste the pickle & add sugar or salt if required.
8. Turn off the gas.
9. Mix properly . Let it cool & keep in glass container.

Enjoy this tasty sweet, hot & sour pickle with paratha or phulka,dahi bhat or anything.

Pl note this pickle does not last long. Keep in fridge upto10 days.


Stuffed mirchi ( chilli )

Tasty & spicy stuffed mirchi !!




Ingredients :
Raw green mirchya ( chillis ) : 7
Oil : 2 tbsp

For stuffing :
Besan : 1/2 cup
Finely chopped onion : 1/4 cup
Garlic paste : 1 tsp
ginger paste : 1/2 tsp
Chopped coriander : 3 tsp
Red chilli powder : 3 tsp
Cumin seeds : 1/4 tsp
Hing : 1/4 tsp
Turmeric powder : 1/2 tsp
Amchur powder : 1/2 tsp
Salt : 1 tsp or as per taste
Sugar : 1/2 tsp
Oil : 3 tsp
Water : 2 tsp

Recipe :
1. Wash the chillies & give a cut in the middle of green chilli. Keep aside.
2. Heat oil in heavy bottom pan.
3. Add cumin seeds, hing & turmeric powder.
4. Add garlic, ginger paste, chilli powder. Saute for a minute.
5. Add onion,salt & sugar. Mix well till onion becomes little soft.
6. Add besan & amchur.
7. Mix well. Sprinkle water & again mix thoroughly.
8. Let the stuffing cool down..
9. Fill all the chillies with this tasty stuffing.
10. Add 2 tsp oil in a heavy bottom pan. Turn on the gas & place stuffed chillies in the oil when it becomes hot. Cook on very slow flame by covering the pan. It will take 5 to 10 min. only.
10.Enjoy this mouth watering stuffed chillies with phulka or rice.


Fresh raw haladi ( oli halad ), Amba halad & Ginger pickle

 Healthy winter special pickle!!!







Ingredients :
Grated Raw fresh Haladi ( oli halad ) : 1 cup
Grared Amba Halad (white Turmeric or Mango ginger ) : 1/2 cup
Grated ginger : 1/4 cup
Coarsely ground Green chilli : 2 tsp
Red chilli powder : 2 tsp
Fenugreek powder : 1/2 tsp
Lemon juice : 1/4 cup ( 2 big lemons )
Vegetable oil : 4 tsp
Mustard seeds : 1/4 tsp
Yellow mustard dal : 1 tsp
Hing : 1/4 tsp
Turmeric powder : 1/4 tsp
Salt : 1 tsp or as per taste

Recipe :
1. Mix grated raw haldi, amba haldi, ginger & Green chilli.
2. Add salt, yellow mustard, fenugreek powder  & red chilli powder. Mix well & Keep aside.
3. Heat oil in tadka pan. Add mustard seeds.
4. When mustard seeds crackle add turmeric powder & hing. Turn off the gas.
5. Let it cool completely.
6. When tadka cools down add it to above mixture. Add lemon juice.
8. Mix well.
9. Store in a airtight glass container.
10.Enjoy this mouth watering pickle with phulka or rice.

Keep the pickle in refrigerator as it does not last long.



Kairiche Lonache

Ingredients :
Raw green mango ( kairi) : 1 cup
Yellow mustard seeds used for pickle :  2 tsp
( broken yellow mustard seeds available in market)
Fenugreek (Methi )seeds : 1/8 tsp
Red chilli powder : 3 tsp
Mustard seeds : 1/4 tsp
Hing : 1/4 tsp
Turmeric powder : 1/4 tsp
Salt : 1 tsp or as per taste
Oil : 3 tsp

Recipe :
1. Cut raw mango into small pieces.
2. Heat oil in heavy bottom vessel or kadhai.
3. Add mustard seeds.
4. When mustard seeds crackle add fenugreek seeds, turmeric powder & hing.
5. Add red chilli powder & salt.
6. Saute for 1 minute & add raw mango pieces in the masala.
7. Turn off the gas.
8. Let the pickle cool down..
9. Store in a airtight glass container.
10.Enjoy this mouth watering pickle with phulka or rice.

Keep the pickle in refrigerator as it does not last long.

Methamba ( raw mango chatpata pickle)

This is very easy & enjoyable sweet,sour & chatpata pickle !!!





Ingredients :
Raw green mango ( kairi) : 1 cup
Jaggery : 1/3 cup
Fenugreek (Methi )seeds : 1/4 tsp
Red chilli powder : 1 tsp
Oil : 2 tsp
Mustard seeds : 1/2 tsp
Hing : 1/4 tsp
Turmeric powder : 1/4 tsp
Roasted & coarsely powdered cumin seeds : 1/2 tsp
Salt : 1/2 tsp or as per taste
Water : 2-3 tsp

Recipe :
1. Peel the green mango & cut into small pieces.
2. Heat oil in heavy bottom vessel or kadhai.
3. Add mustard seeds.
4. When mustard seeds crackle add fenugreek seeds, turmeric powder & hing.
5. Add mango pieces & saute for some time.
6. Add 2 tsp water & salt. Cover with lid for 2 minutes.
7. Mango pieces will be soft. Add jaggery & again cover for 2 minutes or till jaggery melts.
8. Turn off the gas.
9. When mixture becomes cool add red chilli powder & cumin powder.
10.Mix properly & keep in glass container.
11.Enjoy this sweet, hot & sour pickle with paratha or phulka.

Pl note this pickle does not last long. Keep in fridge upto 8 days.

Curry leaves( kadhi patta ) tasty chatney

Ingredients :
Washed & dried curry leaves : 2 Cups
Roasted Peanuts: 1 Cup
Roasted Sesame (til) seeds : 2 tbsp
Red dried chillies : 4-5 or as per taste
Dry tamarind ( chinch ) : 2 inch ( 2-3 pieces)
Sugar : 1/2 tsp
Salt : 1 tsp or as per taste
Oil : 1 tsp

Recipe :
  1. Add oil in a heavy bottom vessel or kadhai. Turn on the gas.
  2. Add curry leaves in the oil when it becomes hot.
  3. Roast the curry leaves till it become crispy.Let them cool completely. Green colour should be retained.
  4. Add roasted peanuts & sesame seeds 
  5. Add red chillies, dry tamarind, sugar & salt.
  6. Grind coarsely in the mixer & enjoy this tasty chutney with Phulka or Bhakri.!
          You can eat this chutney with Idli by adding yoghurt !!
