Carrot n nuts cake

Soft & moist carrot & nuts cake with home made condensed milk !!




Ingredients :
All purpose flour ( maida ) : 1 cup
Whole wheat flour : 1/4 cup
Grated carrot : 1 & 1/2 cup
Sugar : 1/4 cup. If you have very sweet tooth then add more.
Condensed milk : 1/2 cup
Butter : 1/2 cup
Warm Milk  : 1/2 cup or (as required)
Thick yogurt : 2 tbsp
Dry fruits as per individual taste. ( I used  Almonds & Walnuts )
Cinnamon powder : 1 tsp
Jayphal (Nutmeg) : 1/2 tsp
Vannila essence : 1/2 tsp
Baking Powder : 1 tsp
Baking soda: 1/2 tsp
White vinegar : 1/2 tsp
Chopped almonds: 1/2 cup
Chopped walnuts : 1/4 cup
Tuty fruity : 1 tsp ( optional )

Recipe :
  1. In a bowl sieve together maida, wheat flour, baking powder & baking soda. Then add cinnamon powder & jaiphal powder. Mix well. Keep aside. 
  2. Take another bowl. Add butter & sugar. Mix well. Add condensed milk & yogurt. Mix nicely to form light mixture. Mixture will look curdled because of yogurt. Does not matter. Add vanilla essence.
  3. Add all dry ingredients mixture step by step. Fold the mixture gently. Add grated carrot. Add milk required & adjust the consistency.
  4. Add chopped walnuts.Mix & prepare smooth batter.
  5. Grease cake pan with butter or oil. Add batter in the pan.Top up the cake batter generously with almond slices.
  6. I prepared cup cakes also. Top with almond slices & tuty fruity.
  7. Bake the cakes at 180 C for 20 to 25 minutes.
         Enjoy this lovely flavoured heavenly cake with a cup of coffee !!

Cake with Gulab jamun mix

Ingredients :
Gulab jamun mix powder : 3/4 cup ( I used Gits 100 gm mix )
All purpose flour ( Maida ) : 3/4  cup
Powdered Sugar : 3/4 cup  ( If you want  more sweetness add 1 cup )
Fresh cream or milk : 1 cup ( I used home made fresh cream )
Chopped cashews : 2 tsp ( optional )
Any odourless oil : 1/4 cup
Baking Powder : 1/2  tsp
Baking Soda     : 1/4 tsp
Vanilla essence : 1 tsp

Recipe :
1. Add Gulab jamun mix powder & powder sugar in mixer jar & mix it throughly. 
2. Sieve maida,baking powder  & baking soda in a big bowl. 
3. Add gulab jamun mix & sugar mixture in above mixture. Add cashews. Mix well. 
4. Add  fresh cream also in mixer jar & mix well.
5. Add this cream in all the dry ingredients & fold gently. There should not be lumps. Add oil & mix well.
4. Bake the cake in greased tin in oven at 180 C for 35 minutes.
This cake tastes awesome, soft & delicious. 
 Enjoy it with tea or coffee!!! 

strawberry & banana cake with Ragi flour

Ingredients :
Ragi flour : 1  Cup
All purpose flour ( maida )  : 1/2 Cup
Fresh sliced strawberries : 3/4 cup
Chopped Banana : 1/2 cup
Powdered sugar : 3/4 cup
Yogurt ( plain Dahi ) : 1/2 Cup
Baking powder: 1 tsp
Baking soda : 1/4 tsp
White vinegar : 3/4 tsp
Vegetable oil or butter  : 1/4 cup
Vanilla Essence : 1 tsp 

Recipe :
1. Take sugar, sliced strawberries & banana in bowl. Mix together & keep aside.
2. Sieve ragi flour, maida, baking powder & baking soda in a big bowl.
3. Mix all the dry ingredients well.
4. In strawberry, banana & sugar mixture add yoghurt, vanilla essence & oil.   Mix well. 
5. Add dry ingredients mixture slowly in the wet mixture. Mix gently. There should not be lumps. Add white vinegar. Mix well.
6. Grease the tin with little oil. Keep butter paper in the tin & again grease on butter paper. Pour the cake batter in a greased tin.
7. Bake the cake in pre heated oven for 25 to 30 minutes at 180 C. 
8. Cut into pieces as you like & enjoy !!.

Eggless Christmas Fruit cake

Moist & soft easy egg less & alcohol free Christmas cake!! 



Ingredients :
All purpose flour ( Maida ) : 1 1/4  cup
Baking powder : 3/4 tsp
Baking soda : 3/4 tsp
Brown sugar : 3/4 cup
Plain yoghurt ( Dahi)  :  1/2 cup
Hot milk   : 1/4 cup
Orange juice : 3/4 cup ( I used fresh orange juice but store bought juice can be used)
                                     ( Apple juice can be used)
Butter : 1/2 cup ( I used salted Amul butter )
Black seedless raisins : 3/4 cup
Golden raisins : 3/4 cup
Chopped walnut : 1/2 cup
Chopped cashew : 1/4 cup ( optional )
Tuty fruity : 1/2 cup
Chopped Glazed cherries : 2 tsp
Orange zest : 1/2 tsp
Lemon zest : 1/2 tsp
Cardamom powder : 1/4 tsp
Cinnamon powder : 1 small pinch
Clove powder : 1 small pinch ( 1 clove )  
Vanilla essence : 1 tsp

Soaking of fruits :
In a bowl take black raisins,golden raisins, walnuts, cashews, glazed cherries & tuty fruity. Any other dry fruits like apricot can be used. Add orange juice in the fruits & soak for 3-4 hours or if you have time then soak overnight.
Before starting to prepare cake drain the soaked fruits & keep aside.

Recipe :
1. Sieve maida, baking powder & baking soda in a bowl. Keep aside.
2. In another bowl take soften butter & brown sugar. Mix well with hand whisker till it becomes fluffy.
 Add yoghurt , hot milk & vanilla essence. Add cardamom powder, cinnamon & clove powder.   Again mix well. Mixture looks curdled. But does not  matter.  
3. Add maida mixture slowly & fold gently. Add orange & lemon zest.
4. Add soaked fruits, mix well. Add also orange juice after draining fruits.
5. Pour the batter in a greased mould & bake in preheated oven at 180 C for 30-35 minutes.
Enjoy this moist & soft cake which requires very less soaking time.


Cake for fast ( Upasacha cake )

Ingredients :
Amaranth Flour ( Rajgira ata ) : 3/4 cup
Barnyard Millet ( Vari or Bhagar ata ) : 3/4  cup
Water Chest nut Flour ( Singhareka ata) : 1/4 cup
Fresh  coconut : 1/2 cup ( Desiccated coconut can be used )
Ripe mashed banana : 1 cup ( I have used 3 large bananas )
Powdered Sugar : 1/2 cup ( Add more sugar if you want more sweetness )
Plain yoghurt ( Dahi)  :  1/2 cup
Warm milk   : 3/4 cup
Desi ghee  : 4 tsp
Elaychi powder : 1/2 tsp
Baking Powder : 1  tsp
Baking Soda     : 1/4 tsp
Almond slices : 3 tsp

Recipe :
1. Sieve rajgira ata, vari ata, singhara ata, baking powder & baking soda.  Mix all the dry ingredients well.  Keep aside.
2. In another bowl add mashed banana, desi ghee, sugar, yoghurt & mix throughly.
3. Add elaychi powder & coconut. Mix well.
4. Add the mixture of dry ingredients slowly. Start adding milk as required. Add dry mixture & milk alternately till all the mixture is finished & you get required batter consistancy. Adjust milk quantity accordingly.
5. Pour the mixture in a greased tin.Decorate the top of the cake batter with almond slices.
6. Bake the cake in oven at 180 C for 25 minutes.
You can bake the cake in cooker or on gas stove using non stick pan.
This cake turns out little moist & tastes heavenly.

Cut & enjoy this delicious cake.

Beet root, Coconut , chocolate cake with Ragi flour

Ingredients :
Ragi flour : 1  Cup
All purpose flour ( maida )  : 1/4 Cup
Beet root pulp : 3/4 cup
Desiccated coconut : 1/2 cup
Chocolate powder : 2 tsp
Powdered sugar : 3/4 cup
Low fat Cream : 1/2 cup ( optional ) Milk can be used instead
Yogurt ( plain Dahi ) : 1/2 Cup
Baking soda : 1/4 tsp
Baking powder: 1 tsp
Vegetable oil or butter  : 1/4 cup
Vanilla Essence : 1 tsp 

Recipe :
1. Pressure cook beet root  for 3 whistles. Let it cool.Peel off the skin. Grate it or grind it to make pulp. Keep aside.
2. Sieve ragi flour, maida, chocolate powder, baking powder & baking soda in a big bowl.
3. Add coconut into this mixture. Mix all the dry ingredients well.
4.In another bowl add sugar, Yoghurt & cream & mix well till it becomes fluffy. You can add milk instead of cream.
5.Add oil & vanilla essence. Mix well.
6.Add dry ingredients mixture slowly in the wet mixture. Mix gently. There should not be lumps.
7.. Grease the tin with little oil. Keep butter paper in the tin & again grease on butter paper. Pour the cake batter in a greased tin. 
8. Bake the cake in pre heated oven for 25 to 30 minutes at 180 C.
9. Cut into pieces as you like & enjoy !!.





Easy eggless Pineapple upside down cake

Ingredients :
All purpose flour ( Maida) : 1  Cup
Corn flour : 1 tsp
Yoghure ( Dahi ) : 3 tsp
Baking soda : 1/2tsp
Baking powder: 3/4 tsp
Yoghurt ( plain Dahi ) : 1/2 Cup
Warm Milk : 1/2 cup
Butter : 4 tsp
Sugar : 5 tb sp
Brown sugar : 2-3 tb sp
Vanilla Essence : 1 tsp
Cherries : for decoration

Bottom prep: 
Grease the baking tin with butter & sprinkle brown sugar on it.
Arrange the pineapple pieces above butter & brown sugar.
Decorate with cherries. Keep aside.

Recipe :
1. Sift maida, baking powder & baking soda. Keep aside.

2. In a bowl add yoghurt, sugar, melted butter, vanilla essence & beat well. Add warm milk & mix well.

3. Add the above mixture of maida & baking soda  baking  powder slowly & combine it. Do not over beat the mixture. 

4. Batter will be thick. Spread it over the pineapple layer evenly.

5. Bake in the oven for 15 -20 minutes at 180 C.or insert a tooth pick & watch.

6. Let the cake cool completely.

7. Flip in the serving plate. Cut & enjoy this delicious & very light cake.



Chocolate marble cake in cooker

Ingredients :
Fine Suji : 1 cup
All purpose flour ( Maida ) : 1 cup
Sugar : 3/4 cup
Plain yoghurt ( Dahi)  :  3 tb sp 
Milk   : 1 cup ( or as required for consistency )
Chocolate Powder: 2 tsp
Baking Powder : 1  tsp
Baking Soda     : 1/2 tsp
Desi ghee : 4 tb sp
Vanilla essence : 1 tsp

Recipe :

1 . Add sugar, yoghurt & milk in the mixer & prepare smooth mixture. Take it in a big bowl.
2 . Add slowly Suji & maida in that mixture. Add desi ghee & vanilla essence. Add warm milk if required & prepare a smooth batter.  Add baking powder & baking soda & mix properly.
3 . Transfer half of the batter in another bowl & add chocolate powder & mix well.
4 . Preheat the cooker. Put the cooker stand at the bottom.
5 . Grease the tin with oil or desi ghee & sprinkle some maida on it.
6 . Pour one layer of white batter in the tin. Then above that lay the layer with the batter containing    chocolate powder.
7 . Likewise prepare the tin till both the batters finish. Tin should be filled upto 3/4 part only.
8 . Keep the tin in preheated cooker & close the lid without whistle.
9 . Cake will be ready in 35 to 45 minutes.
10. Cut and enjoy.

You can bake the cake in the oven at 180 C for 35 minutes.

Mango Cake

This is very simple cake baked on gas stove & tastes awesome!!! 








Ingredients :
Fine Suji : 1 cup
Mango pulp : 1 cup ( 2 big mangoes ) or tinned mango pulp
Plain yogurt :  3 tb sp 
Milk   : 1/2 Cup( or as required for consistency )
Sugar : 1/4  Cup
Tuty fruity: 4 tsp (can be substituted by seedless raisins)
Elaichi powder (Green Cardamom) : 1/2 tsp
Baking Powder : 1  tsp
Baking Soda     : 1/2 tsp
Desi ghee : 4 tsp
Pinch of Salt.

Recipe :
1. Grind sugar & then add fresh mango pulp ( can use frozen ), yoghurt, baking powder & baking soda in the mixer jar to a smooth paste. 
2. Take the mixture in a big bowl . Add suji & fold properly. Add melted desi ghee.
3. Then add milk as required. 1/2 cup will be good enough.  (Consistency should be like
    like idli batter )
4. Add tuti fruity or seedless raisins.  
5. Add Cardamom powder. Mix well.
6. Grease the non stick pan with ghee.  Pour the mixture into the pan and spread it evenly. Add      few drops of Ghee on top so the cake won't stick to the Tava when you flip it.
6. Keep the vessel  on Tava (Griddle) & cover it with lid . Keep on low flame.
7. Check on the cake with a knife or tooth pick after 10-15 min.  You should smell sweet goodness by this time! The cake should be golden brown by now. At that time flip it on the Tava (Griddle) which is kept below.
8. Turn off the flame after 2 mins as the Tava (Griddle) is already hot. Keep it for a few minutes until the lower side of the cake becomes golden brown .
Decorate with some pieces of mango.
 Cut into pieces & enjoy !!
* If you want to bake the cake in oven : at 180 C 35 minutes.
* It can be baked in the cooker also. 

Eggless Suji Cake ( Fine Rawa ) with tuti fruity in oven

Many members ask me about this Suji cake to prepare in Oven. So I baked this cake in Oven & it turned out very delicious !!! I am sharing this recipe again with the measurements.




Ingredients :
Fine Suji : 2 1/2  Cups
Plain yogurt : 1 Cup 
Milk   : 1 Cup
Sugar : 1 Cup
Tuty fruity: 1/2 Cup (can be substituted by raisins)
Elaichi (Green Cardamom) or Jayphal (Nutmeg) flavor as per taste
You can substitute Elaichi and Nutmeg with 1 1/2 tsp Vanilla essence
Baking Powder : 1 1/2  tsp
Baking Soda     : 1/2 tsp
Vegetable oil : 1/2 Cup
Pinch of Salt.

Recipe :
1. Mix Suji, Yogurt, Milk, Sugar and Vegetable oil. Keep mixture aside for 15 minutes.
 (Consistency should be like Idli batter. Add milk as required.)
2. When ready to bake, add baking powder & baking soda .
3. Add tuti fruity & raisins, vanilla essence
5. Grease pan with butter or oil.  Pour the mixture into the pan and spread it evenly. Add a few drops of Ghee on top for flavor
6. Preheat the Oven for 420 F or 215 C.
7. Bake at 420F for about 30 minutes      
8. Check on the cake with a knife or tooth pick.  The cake should be golden brown by now.
9. Take the cake out of oven. Let it cool completely.
9. Cut into pieces & enjoy !!!.





Vegetable cake

This is a kind of Traditional recipe which my MIL used to prepare & traditionally called as Wadi.
With some variations & additions I prepared it like a cake but not sweet !! Do try ! You will love it!

Ingredients :
Besan (Gram Flour) : 1  Cup
Rice flour : 3 tsp
Suji : 2 tsp
Plain yogurt : 3 /4 Cup 
Water : 1/2 Cup or as required
Chopped  vegetables: Carrot, Green Beans, Cabbage (1/2 cup each)
Potato : 1 medium size boiled & cut into big pieces
Green peas : 1/2 cup
Chilli paste : 1 tsp
Garlic paste : 1 tsp
Corriender leaves : Handful
Cumin powder : 1 tsp
Corriender powder : 1 tsp
Red chilli powder : 1 tsp
Turmeric powder : 1  tsp
Sesme seeds : 2 tsp
Ajwain  seeds : 1/2 tsp
Salt : as per taste
Sugar : 1tsp
Olive Oil : 4 tsp

Recipe :
1. Dry roast Gram flour for 5 minutes.
2. Add Rice flour & suji.
3. Add all vegetables along with peas & potato.
4. Add Coriander, cumin, chilli, turmeric powder and yoghurt.
5. Also add Chilli & Garlic paste.
6. Add water as required. Consistency should be little thicker than idli batter.
7. Add olive oil.
8. Grease the non stick pan with little oil.  Pour the mixture into the vessel and spread it evenly. Add a few drops of oil on top so the cake won't stick to the Tava when you flip it.
6. Keep the vessel  on Tava (Griddle) & cover it with lid . Keep on low flame.
7. Check the cake with a knife or tooth pick after 15to 20 min.  The cake should be golden brown by now. At that time flip it on the Tava (Griddle) which is kept below.
8. Turn off the flame after 2 mins as the Tava (Griddle) is already hot. Keep it for a few minutes until the lower side of the cake becomes golden brown .
9. Cut into pieces as you like & enjoy  with plain yoghurt or green chutney!!!.

If  you want to bake in the oven time will be 40-45 minutes at 180 C.


Eggless Suji Cake( fine rawa ) without oven

This very simple recipe with less ingredients.

Ingredients :
Fine Suji : 1  Cup
Plain yogurt : 3 /4 Cup 
Milk   : 1/2 Cup or as required
Sugar : 3/4 Cup
Tuty fruity: 4 tsp
Black raisins : 4 tsp
Elaichi (Green Cardamom) or Jayphal (Nutmeg) flavor as per taste.
Or Vanila essence : 1/2 tsp
Baking Powder : 3/4 tsp
Baking Soda     : 1/2 tsp
Vegetable oil  : 3 tsp
or Desi Ghee : 2 tsp
Small pinch of Salt.


Recipe :
1. Mix Suji, Yogurt, Milk, Sugar,  Desi Ghee or Vegetable oil. If you have time keep mixture aside for about 1-2 hours.
 Consistency should be little thicker than Idli batter. 
2. After 2 hours add baking powder & baking soda .
3. Add tuty fruity & rasins.
4. Add favour as you like.
5. Grease the nonstick vessel with ghee/unsalted butter.  Pour the mixture into the vessel and spread it evenly. Add a few drops of Ghee on top so the cake won't stick to the Tava when you flip it.
6. Keep the vessel  on Tava (Griddle) & cover it with lid . Keep on low flame.
7. Check on the cake with a knife or tooth pick after 10-15 min.  You should smell sweet goodness by this time! The cake should be golden brown by now. At that time flip it on the Tava (Griddle) which is kept below.
8. Turn off the flame after 2 mins as the Tava (Griddle) is already hot. Keep it for a few minutes until the lower side of the cake becomes golden brown .
9. Cut into pieces as you like & enjoy !!!.


Red pumpkin & whole wheat flour cake

We use to prepare sweet puris with red pumpkeen . we call these sweet puris as Gharge. I tried this   simple recipe in the form of cake using same ingredients  & it turned out soo yummy!! No frying, very delicious & healthy !!






Ingredients :
Wheat flour : 1 cup
Semolina ( fine Rava ): 1/4 cup
Red Pumpkin grated : 1 cup
Jaggery : 1/2 cup. If you have very sweet tooth then add more.
Poppy seeds (khaskhas):  2 tsp
Vegetable oil : 3 tb sp
Desi Ghee or unsalted Butter 2 tb sp
Warm Milk  : 3/4 cup or (as required)
Dry fruits as per individual taste. ( I used  Almonds, Walnut & seedless Black Raisins.)
Cashew nuts : 4-5 halves for decoration
Elaichi (Green Cardamom) or Jayphal (Nutmeg) flavor as per taste.
Baking soda: 1/2 tsp
Baking Powder : 1/2 tsp
Small pinch of Salt.

Recipe :
  1. In a  heavy bottom vessel add 3-4 tb sp of water and jaggary  & mix well. Heat for 5 min. on medium flame till jaggery melts.
  2. Add grated pumpkin in that mixture. Keep on low flame with lid  for 5-10 min. or till pumpkin becomes little soft. Let it cool for some time .
  3. Add wheat flour , semolina , Vegetable oil, Elaichi or Jayphal (Nutmeg) powder & warm Milk till the consistency becomes little thicker than Idli batter. Set the mixture aside for 5 minutes.
  4. Add dry fruits. ( Almonds, Walnut & seedless Black Raisins.)
  5. Add baking soda & baking powder. 
  6. Grease the non-stick pan with ghee/unsalted butter. Keep the cashew halves in the pan & pour the mixture into the pan and spread it evenly. Add a few drops of Ghee on top so the cake won't stick to the Tava when you flip it. When you flip the cake the cashews will come on upper side.
  7. Keep the pan  on Tava (Griddle) & cover it with lid . Keep on low flame.
  8. Check on the cake with a knife or tooth pick after 10-15 min.  You should smell sweet goodness by this time! The cake should be golden brown by now. At that time flip it on the Tava (Griddle) which is kept below.
  9. Turn off the flame after 2 mins as the Tava (Griddle) is already hot. Keep it for a few minutes until the lower side of the cake becomes golden brown .
  10. Cut into pieces as you like & enjoy this yummy recipe !!!
   You can bake this cake in oven at 180 C for 40 minutes.
           

Eggless Ragi Cake recipe without oven

This is a very simple & healthy recipe of Ragi (Finger Millet) Cake which is baked on nonstick Tawa (Griddle) by keeping  nonstick vessel on top.
You can bake the cake in oven for 30-35  min. at 180 C.

Keep non stick vessels like this on the gas stove with low flame.


Ingredients :
Ragi flour : 1  Cup
Dates : 3/4 Cup ( seedless or remove seeds.)
Dry fruits as per individual taste. ( I use Almonds, Walnut & seedless Black Raisins.)
Semolina ( fine Rava ) : 1/4 cup
Baking soda : 1/2tsp
Baking powder: 3/4 tsp
Yogurt ( plain Dahi ) : 1/2 Cup
Warm Milk : 3/4 cup
Vegetable oil or butter  : 1/4 cup
Desi Ghee or unsalted Butter can be used.
Vanilla Essence : 1 tsp or you can add Elaychi powder or Nutmeg Powder instead. 
Small pinch of Salt.
2 Tea spoon sugar or Gul (Jaggery) as per taste. If you want more sweetness you can add more Sugar as per taste. I have not added any sugar or jaggery for above measurements. Sweetness of dates is good enough.

Recipe :
1. Soak dates in warm milk for 1/2 hour. Dates become soft. Then grind to a smooth paste along with milk. Preserve 3-4 dates & chop them.

2. Add vegetable oil, Yogurt & grind again so that  mixture becomes homogeneous. 

3. Sieve Ragi flour, baking soda & baking powder. Add suji in the mixture.Add the above mixture in this flour. Fold it properly. Add chopped  Dates to the batter. Add Sugar or Jaggery if required.

4. Add dry fruits. ( Almonds, Walnut & seedless Black Raisins.) & flavour as you like. 

5.  Pour the mixture into the greased vessel and spread it evenly. Add a 1/2 tsp of Ghee on top so the cake won't stick to the Tava when you flip it if you are baking the cake on gas stove.

6. Keep the vessel  on Tava (Griddle) & cover it with lid . Keep on low flame.

7. Check on the cake with a knife or tooth pick after 10-15 min.  You should smell sweet goodness by this time! The cake should be golden brown by now. At that time flip it on the Tava (Griddle) which is kept below. Try to use non stick pan & non stick griddle for baking. Cake will come out nicely.

8. Turn off the flame after 2 mins as the Tava (Griddle) is already hot. Keep it for a few minutes until the lower side of the cake becomes golden brown .

9.Decorate with strawberry & oats.

10. Cut into pieces as you like & enjoy !!.

You can bake the cake in the oven at 180 c for 25-30 minutes.
