Gulachi poli

Favourite maharastrian khamang Gulachi poli !!




Ingredients:
For filling :
 Grated gul ( jaggery ) : 2 cups ( about 1 kg )
 roasted sesame seeds  : 1/2 cup
 Roasted besan :  1/2 cup
 Roasted dry coconut : 1/4 cup
 Roasted Khaskhas ( poppy seeds ) : 1/4 cup
 Desi ghee : 4 tbsp
  Elaichi/ jaiphal powder : 1 tsp
 

Recipe for gul:
1. Grate jaggery & keep aside.
2. Dry roast sesame seeds, coconut & poppy seeds seperately.
3. Dry roast besan adding some desi ghee.
4. Mean while grind roasted sesame seeds, coconut & poppy seeds with elaychi powder.
5.Add this mixture with besan  in the grated jaggery .
6. Knead this mixture till it becomes smooth & soft. Add ghee while kneading.

For outer cover:
 Ata : 3 cups
 Oil : 5 tsp
 Salt : 1 pinch
Water : 3/4 cup or as required
Mix all the ingredients & prepare a smooth dough like chapati dough.
Prepare 60 equal balls of lemon size. This measurement yields about 30-32 gul polis depending upon the size. You can prepare the size you like .
Take 2 balls, roll them in puri size & fill the gul stuffing in between 2 polis. Take same size of gul & roll in puri size & then fill in between puries. Pack nicely gul filling in between & then roll the poli in bigger size. Cut the sides with pizza cutter. Roast on non stick pan both sides. 

Enjoy this delicious gul poli with dollops of ghee. It is very convenient to carry these rotis while travelling. It lasts about 15 days.





Matar (fresh green peas ) paratha

Ingredients:

Fresh green peas : 2 cups
Boiled & mashed potato : 1/4 cup
Garlic paste : 1 tsp
Ginger paste : 1 tsp
Green chilli paste : 1/2 tsp
Red chilli powder : 1 tsp
Coriander powder : 1 tsp
Cumin powder : 1 tsp
Garam masala : 1 tsp
sesame seeds : 3 tsp 
Salt : 2 tsp or as per taste
Sugar : 1/2 tsp
Lemon juice : 2 tsp
chopped coriander : 1/2 cup
 Ata : 2 cups or as required
 Oil : 5 tbsp

Recipe:
1. Cook green peas in pressure cooker for 1 whistle by adding little salt.
2. Let it cool. Grind coarsely or mash it. Add mashed potato.
3. Add all the above ingredients except ata & oil.
4. Mix properly. Then add ata. Add oil little by little.
5. Knead properly. Prepare 6-8 balls out of this ata.
6. Roast it to nice brown colour on heavy griddle by adding little oil on it.

Enjoy this tasty & healthy paratha with pickle, chutney or with yoghurt !!!

Multi grain or Jwarichi( Jowar ) Bhakri

                                  Very healthy & tasty Indian bread ' Bhakri '  !!



Ingredients :
Jowar Ata : 1 cup
Bajra ata ( Pearl millet) : 1/2 cup
Ragi ata ( Finger millet ) : 1/2 cup
Rice ata : 1/4 cup
Wheat ata : 1/4 cup
salt : 1/2 tsp
Water : 1 1/2 cup or as required

Recipe:

1. Add the water in a pan & turn on the gas. Let the water boil.
2. Mix all the flours & salt in a bowl.
3. Add boiling water on the flour mixture. Cover the bowl & let it sit for 2-3 minutes.
4. After 2-3 minutes knead the mixture thoroughly. Divide the dough in equal parts. This             measurement yields about 6 medium size bhakris.
5. In a big plate or preferably parat prepare bhakri.
6. On a non stick pan or tava roast the bhakri.
     You can prepare the bhakri using only one of the ata  or any combination as you like. Here in the picture above I have prepared the bhakri using jowar ata only.

Sanja ( Suji halwa with jaggery ) poli

Easy & quick way to prepare sanja poli !! 
This recipe never goes wrong if you follow exact measurements  !!


Sanja with jiggery

Ingredients:
For Sanja ( Suji halwa with jaggery )
 Fine suji : 1 cup
 Jaggery : 2 cups
 Water : 2 cups
 Desi ghee : 4 tsp
  Elaichi/ jaiphal powder : 1 tsp
  Roasted poppy seeds : 1 tsp ( optional )

Recipe for Sanja:
1. In a heavy bottom pan add water. Turn on the gas on high flame.
2. Add jaggery in the water when water starts boiling.
3. Stir the mixture till all the jaggery melts. Add desi ghee & elaychi or jayphal powder.
4. Mean while roast the suji for 5 minutes. Roasting till suji turns brown is not required.
5. Add suji in the jaggery & water mixture. Mix properly. Cover the pan & keep on low flame till sanja becomes dry. Turn off the flame.
6. Let it cool.

For outer cover:
 Ata : 1 cup
 Oil : 5 tsp
 Salt : 1 pinch
Water : 3/4 cup or as required
Mix all the ingredients & prepare a smooth dough like chapati dough. Only more oil is required for this dough for soft sanja roties.
Take a small ball of ata & same amount of sanja & stuff it by preparing a cup of ata or simply roll ata ball in puri size & stuff sanja in it. Now roll the roti or poli as much as you can. Roast on non stick griddle till it becomes golden brown.  Sanja poli is very easy to roll. You can prepare 15 rotis out of it in just 1/2 an hour.

Enjoy this delicious Sanja poli with ghee or milk. It is very convenient to carry these rotis while travelling. It lasts about 4-5 days.





Mango poli

Delicious Mango poli !!



Ingredients:
For filling
Mango pulp : 1 cup ( 2 big mangoes )
Milk powder : 3/4 cup ( I used Amul )
Warm Milk : 1/4 cup
Sugar : 1/2
Roasted poppy seeds : 1 tsp
Desi ghee : 4 tsp
Elaichil powder : 1/2 tsp
Saffron strands ; 3-4
Almond powder : 1 tsp

For outer cover:
 Ata : 1 cup
 Oil : 5 tsp
 Salt : 1 pinch
Water : 3/4 cup or as required

Recipe:
1. Take milk powder in a bowl. Add warm milk into it & prepare a smooth paste out of it.
2. Heat 2 tsp desi ghee in a big microwavable bowl.
3. Add mango pulp, sugar & milk powder paste in the bowl.
4. Mix all properly & keep the bowl in microwave oven for 3 minutes without covering. Mixture will be thick by this time.
5. Add roasted  poppy seeds, elaichi powder, saffron strands, almond powder & mix properly.
6. Again microwave for 1 minute.
7. Still mixture is not thick again microwave for a minute.
7. Knead it till it becomes smooth. Keep aside.
9. Prepare a nice smooth dough of ata by adding salt water & oil.
10.Take a small ball of ata . Prepare small roti out of it. Not very thin.
11. Prepare a mango mixture ball to fill in .Take as much as mango mixture to fill in the roti.
12.Prepare a roti & roast both sides to light brown colour on non stick pan by adding little ghee.
     Enjoy this heavenly mango poli with ghee!!



Palak & Paneer Paratha

Very healthy Palak & Paneer Paratha !!!




Ingredients:
For filling :
Chopped Palak : 2 cups
Scrambled Paneer : 1 cup
Boiled potato : 1/2 cup
Garlic paste : 1 tsp
Ginger paste : 1 tsp
Green chilli paste : 1/2 tsp
Red chilli powder : 1 tsp
Coriander powder : 1 tsp
Cumin powder : 1 tsp
Garam masala : 1 tsp
Salt : 1 tsp or as per taste
Sugar : 1/2 tsp
Lemon juice : 2 tsp

For Paratha cover :
 Ata : 2 cups
 Oil : 5 tsp
 Salt : 1/2 tsp
Water : 3/4 cup or as required

Recipe:
1. Mix properly all the ingredients for filling & keep aside.
2. Prepare a nice smooth dough of ata by adding salt & oil.
3. Let it rest for about an hour.
4. Take a small ball of ata. Prepare a cup or spread it like phulka.( not thin )
5. Take double amount of palak & paneer mixture & fill in ata cup.
6. Roast it to nice brown colour on heavy griddle by adding little oil on it.
