Veg Makhanwala

Delicious home made Veg Makhanwala !!




Ingredients :

Cauliflower cut lengthwise  : 1 /2 Cup
Green beans  : 1/4 cup
Carrot : 1/4 Cup
Potato cut in chips : 1/2 cup 
Green peas ( Fresh or frozen ) : 1/4 Cup
Green pepper : 1/4 cup
Paneer cubes : 1/2 Cup
Chopped Onion : 1/2 cup
Chopped Tomato : 1/2 Cup
Garlic cloves : 7-8
Green Chilli paste : 1/2 tsp
Ginger : 1 inch piece
Cumin seeds : 1 tsp
Turmeric powder : 1/2 tsp
Tej patta : 2
green elaychi : 3
Kashmiri Red chilli powder : 2 tsp
Garam Masala : 2 tsp
Kasoori methi : 1 tsp
Handful Coriender leaves : For decoration
Fresh cream : 1/2 cup
Milk : 3 tsp ( to soak poppy seeds )
Salt : as per taste
Sugar : 1 tsp
Butter or desi ghee : 4 tsp

Recipe :
1. In a heavy bottom pan add 1 tsp of ghee or butter. Add cumin seeds, tej patta, green elaychi. Then       add garlic cloves, onion & tomato. Saute for 2 minutes. Keep aside in a bowl & let it cool.
2. Boil all the vegetables to soft except green pepper. Do not overcook.
3. Drain water from the vegetables.. Add 3 tsp ghee or butter in the same pan saute green pepper then     add all the veges. 
4. Remove tej patta & grind remaining masala with onion,garlic & tomato to a smooth paste.
5. Add this paste to vegetables.Add red chilli powder, turmeric powder & garam masala. Add salt &      sugar.
6. Add little water. Mix properly.
7. Add paneer cubes & kasoori methi.
8. Simmer for 2 minutes.
9. Add cream & turn off the gas stove. save some cream for garnishing.
10. Garnish with handful of coriander & cream. 
11. Serve with hot phulkas, nan or paratha !!!





Sarsoka Saag & Makkeki Roti

Sarsoka saag :

Ingredients :
Chopped Mustard leaves ( Sarso)  : 1 Cup (1 Bunch )
Chopped Batua Leaves  : 1 Cup  ( 1 Bunch )
Chopped Spinach  : 1 Cup (1 Bunch )
Chopped Onion : 1 Cup
Chopped Tomatos : 1/2 Cup
Chopped Garlic : 1 tbsp
Chopped Ginger : 1/2 tsp
Chopped green chilli : 1 tsp or as per taste
Garam Masala : 1 1/2 tsp
Red Chilli powder : 1/2 tsp
Salt : 1 tsp ( as per taste )
Sugar : 1/2 tsp
Vegetable oil : 2 tsp
Cumin seeds : 1 tsp
Coriander powder : 1 tsp
Water : 1 1/2 cup
makaika ata : 2 tsp
Fresh Cream : 4 tsp Cup
Butter : 2 tsp

Recipe :
1.Add mustard, batua & spinach leaves in pressure cooker. Add 3/4 cup onion, garlic, green chilli, ginger,red chilli powder, garam masala, coriander & cumin powder in it. save 1/4 cup onion for garnishing.
2. Pressure cook the above mixture till 3 whistles. Let it cool. Grind in the mixer to fine paste adding makaika ata.
3. Transfer this mixture to heavy bottom pan & keep for simmering upto 30 minutes.
4. In another pan add oil & 1 tsp butter. Add remaining onion & saute till brown. 
5. Add this onion to the veggis mixture keeping some onion for garnishing. 
6. Mix well & cook for 2-3 minutes. Turn off the gas.
7. Add fresh cream & mix.
8. Garnish with green chilli, onion & butter.
9. Serve hot.
      Enjoy this healthy & Delicious  bhaji with hot makkeki roti.


Makkeki Roti:
Corn flour : 1 1/2 Cup
Whole wheat flour : 1/2 cup
Chopped coriander leaves : 2 tsp
Finely chopped onion : 2 tsp
Ajwain ( carom) seeds : 1 tsp
Salt : 1/2 tsp
Water : as required
Butter to apply on roti.
Mix all the ingredient & Knead the flours with salt & water. & prepare the rotis. Serve hot with dollop of butter.

Navratan korma

Ingredients :
Vegetables cut into small cubes:
Cauliflower : 1  Cup
Green beans  : 3/4 Cup
Carrot : 3/4 Cup
Potato : 3 /4 Cup 
Green peas ( Fresh or frozen ) : 1 Cup
Paneer cubes : 1 Cup
Chopped Onion : 1 cup
Chopped Tomato : 1 Cup
Cashew nuts : 7-8 cut in halves ( optional )
Garlic cloves : 7-8
Green Chilli paste : 1/2 tsp
Ginger : 1 inch piece
Red chilli powder : 2 tsp
Garam Masala : 2 tsp
Corriender leaves : For decoration
Roasted Sesme seeds : 1 tsp
Poppy seeds ( Khaskhas ) : 1 tsp
Milk : 3 tsp ( to soak poppy seeds )
Fresh cream : 4 tsp
Salt : as per taste
Sugar : 1 tsp
Vegetable Oil : 4 tsp

Recipe :
1. Soak poppy seeds in  milk for 2-3 hours.
2. Boil all the vegetables to soft. Do not overcook.
3. Keep aside the vegetables.
4. In a heavy bottom vessel boil onion & tomato with little water. It should be soft to grind.
5. Grind coarsely garlic cloves, chilli, ginger & roasted sesame seeds together.
6. Keep aside chilli, garlic, ginger & sesame mixture .
7. Grind onion & tomato to a smooth paste.
8. Also grind poppy seeds with milk to smooth paste.
9. Add oil in a heavy bottom vessel or kadhai.
10. Roast chilli, garlic, ginger, sesame mixture & add onion tomato paste into it.Then add paste of  poppy seeds. 
11. Fry this masala properly & then add garam masala & red chilli powder.
12. Mix all masalas properly. Add little water if required.
13. Add all the boiled veggies & paneer.  also add cashew nuts. Mix gently.
14. Add some fresh cream & mix. Decorate with little coriander leaves.
15. You can add pieces of pineapple if you like.
16. Serve with hots phulkas or paratha !!!
