Baked matar ( fresh green peas ) karanji

It is the season of fresh green peas here in India !! I tried this matar karanji in baked version & it turned out very good!                                                                                



Ingredients :
For outer cover :
Whole wheat flour : 1 cup
All purpose flour ( maida) : 1 cup
Baking powder : 1 tsp
Salt : 1/2 tsp
Vegetable oil : 4 tsp
Warm water : 1 cup or as required
Corn flour : 4 tbsp
Desi ghee or butter :  4 tbsp

For Stuffing : 
Boiled & coarsely ground fresh green peas  :2 cup ( Frozen can be used )
Mashed potato : 1/2 cup
Fresh grated coconut : 1/2 cup ( Frozen can be used )
Green chilli paste ; 1 tsp
Garlic paste : 1 tsp
Ginger paste : 1/2 tsp
Garam Masala : 1 tsp
Salt : 1 tsp or As per taste.
Vegetable oil : 2 tsp
Roasted cumin powder : 1/2 tsp
Lemon juice : 1 tsp

Add oil in a pan. Turn on the gas. Add chilli, garlic & ginger paste one by one & roast nicely.   Add boiled & crused peas & mashed potato. Add salt,cumin  powder & garam masala. Add lemon juice. Mix properly. The mixture should be dry. Keep aside to cool down.

Outer cover:

In a big bowl mix together whieat flour, maida, salt & baking powder. Add oil. With the help of water prepare a medium soft smooth dough. Keep it covered & let it rest for 2 hours.

Now take corn flour in a deep broad vessel. ( If you have parat use that preferably). Add  melted ghee in corn flour. With the help of hand mix both thoroughly till you get creamy smooth texture. Add more ghee if  required. The consistency should be like  cream.
After 2 hours prepare 3 bases like thick chapati. Spread corn flour ghee mixture on each base.Roll tightly all three & cut into pieces as the size of karanji you want. Roll each piece with pin & fill with stuffing.
Bake the karanjis @ 180C for 10-15 minutes.
This karanji is not crispy. It is soft but tastes yummy.

Enjoy hot  stuffed karanji with tomato ketchup or with chutney.

Appe with Veggies

Soft, tasty & healthy Appe


Ingredients :
Rice : 1 1/2 Cup
Chana dal ( Bengal Gram ) : 1/2 cup
 Urad dal ( Black Gram ) : 1/2 Cup
Pinch of Soda bicarb ( optional )
Finely Chopped veggies :
Onion : 1/2 cup
Carrot : 1/4 cup
Green bell pepper ( simla mirch ) : 1/4 cup
Green peas : 1/4 cup
Finely chopped ginger & green chilli : 1 tsp or as per taste
Oil : For greasing Appe pan
Jeera ( cumin seeds ): 2 tsp
Coursely ground Black pepper: 1 tsp
Chopped Curry leaves : 8-10
Salt : as required

Recipe :
1. Soak rice for 4-5 hours in a bowl

2. Soak Urad dal , Chana Dal  4-5 hours.

3. Drain the water. But do not throw it. Use little water for grinding.

4. Grind all the ingredients to very smooth batter.

5. Pour the batter in the vessel & mix it thoroughly.

6. Keep this batter overnight for fermentation. Take large bowl otherwise batter will come out after fermentation.

7. Add salt  as per taste & mix batter gently. Add all vegetables, chopped ginger & chilli, ground pepper & mix well.

8. Keep appe pan on gas stove. Add little oil in all cavities. Drop spoonful of batter in every cavity, cover it & cook till golden colour. Flip it & cook other side also.

Enjoy with chutney or tomato ketchup.

Green chutney :

Handful coriander, 1/2 cup fresh grated coconut, ginger, green chilli, lemon juice, 1/2 tsp jeera,salt & sugar as per taste. Grind all ingredients smooth & chutney is ready !!

Fresh Green peas wadi ( cake )

This is traditional recipe my MIL used to prepare ! She used to prepare it on gas stove. With little variation I baked this wadi in oven. Its really very tasty!!










Ingredients :
Besan (Gram Flour) : 1  Cup
Bhajni :  1 cup ( chakli bhajni or thalipith bhajni )
Rice flour : 2 tsp
Water : 2-3 Cup or as required
Fresh Green peas : 1 1/2 cups ( frozen can be used )
Potato : 1/2  cup boiled & cut in big pieces
Chilli paste : 1 tsp
Garlic paste : 1 tsp
Coriender leaves : Handful
Red chilli powder : 1 tsp
Turmeric powder : 1  tsp
Cumin seeds : 1 tsp
Sesme seeds : 2 tsp
Salt : as per taste
Sugar : 1tsp
Vegetable Oil : 4 tbsp
Baking powder : 3/4 tsp

Recipe :
1. Dry roast Gram flour for 5 minutes or till it becomes light brown.
2. Add Bhajni & Rice flour in the besan. 
3. Boil green peas till little soft. Add  peas & potato to above misture.
4. Add Coriander, cumin, chilli, turmeric powder .
5. Also add Chilli & Garlic paste. Add salt & sugar.
6. Add water as required. Consistency should be little thicker than idli batter.
7. Add oil.
8. Grease the  pan with oil generously.  Pour the mixture  and spread it evenly. Add a few drops of oil on top & also add some chopped coriander on the top.
9. Bake the wadi in preheated oven at 180 C for 40-45 minutes till it becomes golden brown..


Cut into pieces & enjoy this tasty wadi with yogurt!!

Savory Rawa Cake

Ingredients :
Fine Rawa (Suji ) : 1 cup ( 250 ml )
All purpose flour ( Maida ) : 1/2 cup
Butter :2 tsp ( I used Amul butter )
Grated Cheese : 3 tsp
Vegetable oil : 3 tsp
Ginger paste : 1/2 tsp
Green chilli paste : 1 tsp
Garlic paste : 1/2 tsp
Chopped Green beans : 1/4 cup
Chopped carrot : 1/4 cup
Finely chopped onion : 3 tsp
Green peas : 1/4 cup
Chopped spinach : 1/4 cup
Boiled corns : 3 tsp 
Plain yogurt : 1 Cup
Water : 1 cup
Baking Powder : 1  tsp
Baking Soda     : 1 tsp
Salt : 1 tsp or as per taste.


Recipe :
1.Dry roast rawa till it becomes light brown. Do not over roast. Let it cool .
2. Take  vegetable oil in a pan. Add all chopped vegetables when it becomes hot. Saute for 2-3 minutes. Do not overcook. Add salt. Preserve some corns to top on the cake. 
3. Add butter, cheese chilli garlic ginger paste & mix well.
5. Add roasted rawa, maida & yogurt. Mix.
6. Add water slowly till dropping consistency.
7. Add baking powder & baking soda & mix gently.  
8. Greese the cake pans & line with parchment paper.
10. Bake at 180C for 30 min. in preheated oven.
9. Cut & enjoy this different cake with sauce or dahi !!!.

Carrot & red pumpkin puri

Try these yummy puries full of healthy goodies. Will be favourite to all !! Ideal for children's lunch box!!

Ingredients :
Grated carrot : 1 cup
Grated red pumpkin : 1 cup
Wheat flour : 2 cup
Rice flour : 1 cup
Jaggery : 2 tsp
Red chilli powder : 1 tsp
Salt : 1 tsp or as per taste
Rosted jeera powder : 1/2 tsp
Black pepper powder : 1/2 tsp
Hot Vegetable oil : 3 tb sp ( mohan )
Oil : for frying puris
Sesame seeds : 3 tsp
Adjust red chilli powder & jaggery as per your test. But this proportion gives very good test.


Recipe :
  1. In a  heavy bottom pan mix all ingredients except oil, wheat flour & rice flour.
  2. Turn on the gas. Add 1/2 cup of water.
  3. Let it cook till jaggery dissolves completely. Keep for 2 minutes. 
  4. Turn off the gas. Let the mixture cool completely.
  5. Add wheat flour & rice flour. Add hot oil.
  6. Prepare nice soft dough. Let it sit for 1/2 an hour.
  7. Divide in 4-5 parts. Roll with pin about 1/4 inch thick  & cut in the shape as you like.
  8. I cut the puries with cookie cutter.
  9. Fry in the oil & keep on tissue napkin to remove extra oil. 
These puries are very tasty as there is perfect balance of sweet, hot & salty taste. Sesame seeds give nice crunch & Carrot, red pumpkin gives beautiful colour & heathy too!!
   Enjoy with hot tea or tomato ketchup or sweet lemon pickle.

Home made Paneer with herbs & chilli flakes

Paneer is very healthy & all of us love it. Giving little twist we can prepare parathas, subji etc.You can eat by stir frying cubes !!





Ingredients :
Milk : 500 ml
Can use cow milk or full fat milk as you like.
Lemon juice :  2 tsp
Mixed herbs : 1 tsp
Chilli flakes : 1/2 tsp

Recipe :
  1. Keep milk on gas stove & bring to boil.
  2. Add lemon juice & salt. mix well.
  3. Add mixed herbs & chilli flakes.
  4. Turn off the gas.
  5. Pour the mixture on muslin cloth. Keep weight on it by covering the paneer with muslin cloth. 
  6. Let it be dry completely. Keep in refrigerator overnight.
  7.  Cut into cubes as you like & enjoy !!

Colourful chivda

Colourful, healthy & tasty chivda for this Diwali !!




Ingredients :
 Bhajke Pohe (Flattened puff rice ( not  murmura ) : 3 cups
 It is easily available in the market.
Oil 4-5 tsp
Roasted peanuts : 1/2 cup
Roasted Almonds : 1/2 cup
Roasted daliya ( dale ) : 1/2 cup
Curry Leaves :  1/4 cup
Hing : 1/2  tsp
Turmeric powder : 1/4 tsp
Green chilli : 3-4 or as per your taste
Coriander powder : 2 tsp
Cumin powder : 1 tsp
Mango powder ( amchur ) : 1/2 tsp
Red chilli powder : 1 tsp or as per your taste
Salt : 1 tsp
Powdered sugar : 2 tsp
Here for a twist I prepare small flat disc or bundi out of besan using spinach pulp & beet root pulp for colourful bundis.
For preparing bundi : 4 tsp besan, 2 tsp spinach or beet root pulp,little salt & prepare a batter of dropping consistancy using water. Add little salt. Make 2 different batters of 2 colours. Prepare bundi out of it & mix in the chivda!!

Recipe:
 1. In a heavy  bottom pan add 5 tsp oil.
2. Add peanuts, almonds, dale , green chillis , curry leaves .
3. Stir properly till it becomes crispy. Keep it aside.
4. Dry roast bhajke pohe for 2 minutes. Add pohe to above mixture.
5. Take remaining oil in a bowl. All all dry ingredients & mix well.
6.Add this paste to chivda & mix throughly.
7.Add coloured bundi & mix.
 Enjoy this colourful & healthy chivda !!

Surlichi vadi in pressure cooker

Easy way to prepare surlichi wadi !!



Ingredients :
For Batter :
Besan  : 1 cup 
Yogurt : 1 cup
Water : 1 cup ( Adjust according to thickness of yoghurt )
Turmeric powder : 1/2 tsp
Ginger & green chilli paste : 1 tsp
Salt : 1/2 tsp or as per taste
Sugar : 1/2 tsp

For filling :
Cheese, paneer or grated fresh coconut.
Here I used grated cheese for some variation.

For seasoning :
Oil : 2 tsp
Mustard seeds : 1/2 tsp
Sesame seeds : 1/2 tsp
Chopped coriander : for garnishing

Recipe :
1.In a vessel which fits in pressure cooker add besan, yogurt,turmeric powder, salt & ginger & chilli paste.
2. Mix well. Add little water & make smooth paste. Add water step by step. The batter should be little thicker than milk.
3. Place the vessel in pressure cooker. cover the cooker with whistle on.
4. Take 3 whistles on medium flame. Let pressure cooker cool. 
5. Open the cooker. Stir the mixture fast till the batter becomes smooth.
6. Spread the batter on clean platform while it is hot.
7. The process should be really fast.
8. Let it cool. Spread cheese on it. Roll surlichi vadi as shown in picture.
9. Prepare the seasoning using oil, mustard seeds & sesame seeds & pour  on rolled surlichi vadi.
10. Garnish with chopped coriander .
Enjoy this yummy recipe as side dish or evening snack.


Baked masala brinjal ( Egg plant )

Ingredients :
Large brinjal  : 1
Plain yoghurt ( dahi ) : 1/2 cup
Besan ( Bengal gram flour ) : 3 tsp
 Garlic paste : 1 tsp
Green chilli paste :  1 tsp
Red chilli powder : 1 tsp
Garam masala : 1/2 tsp
Salt : 1/2 tsp ( as per taste )
Sugar : 1/2 tsp
Vegetable oil : 2 tsp
Turmeric powder : 1/2 tsp
Finely chopped coriander : 1tsp
Grated cheese : 1/2 cup ( optional )

Recipe :
1. Cut a thin slice of brinjal as shown in the picture.
2. Cut the slices but do not separate them. ( Pl refer the picture )  
3. Apply little oil on the whole brinjal . Keep aside.

Masala prepration  ( filling ):
1. Add besan,chilli, garlic paste, red chilli powder & all other ingredients along with yoghurt. 
2. Add oil. Preserve little oil to apply on brinjal. Mix well.
3. Consistency should not be runny. Adjust besan accordingly. 
4. Fill the brinjal slices with the filling. Add filling generously. Also fill cheese in between all slices.
5.Bake the filled brinjal in preheated oven at 200C for 25 minutes. Check in between. 
Enjoy the delicious baked masala brinjal with tomato ketchup. 


Shevai ( Vermicelli) sheera

We always prepare shevai kheer with shevai. Try this sheera tastes so yummy & looks also different!!



Ingredients :
Shevai (Vermicelli) : 1/2  Cup
Powdered sugar : 3 /4 Cup 
Milk   : 1 Cup
Water : 1/2 cup
Elaichi (Green Cardamom) powder : 1 tsp
Golden raisins : 4 tsp
Desi Ghee : 4 tsp
Coarse almond powder : 2 tsp
Saffron : 7-8 threads ( optional )
Small pinch of Salt.
Whole cashews : for garnishing


Recipe :
1. In a heavy bottom pan or kadhai add 3 tsp of desi ghee.
2. When ghee dissolves add shevai in it & roast properly till it turns brownish red. You will come to know with its heavenly aroma. You get roasted sevai in the market in that case  roast lightly in melted ghee & mix properly
3. On another gas stove boil water & milk withsugar.  Add elaichi powder.
4. Add this mixture in the roasted shevai & cover the pan.
5.Keep on low flame.
6. Mix it properly & cover the pan. Keep it on low flame till all milk &  water mixture evaporates. 
7. At this stage add remaining 1 tsp ghee mix again properly & turn off the flame.
8. Let it covered for 5 minutes. Add raisins & almond powder
9. Garnish it with roasted cashews & serve hot !!

Oats, Quinoa, vari chaval ( barnyard millet ) uttapa

Ingredients  :

Barnyard millet ( Vari or bhagar chaval ) : 1 cup
Plain oats : 1 cup
Quinoa : 1 cup
Udid dal ( split gram dal ) :  1/2  cup
Moong dal : 1/4 cup
Chana dal : 2 tsp
Fenugreek (Methi ) seeds : 1/2 tsp
Chopped spinach : 1 cup
Chopped onion : 1/2 cup
Chopped capsicum : 1/2 cup
Chilli flakes  or red chilli powder : 1 tsp
Salt : 1 tsp or as per taste
Oil :  for greasing griddle
Butter : to apply on the top of uttapa ( optional )

Recipe :
1. Soak vari chaval, oats, quinoa, udid dal, chana & moong dal, methi seeds in a large bowl overnight or 4- 5 hours is also sufficient.
2.Grind the mixture along with salt to fine paste.
3. Keep it for 8 hours for fermentation.
5. Mix the batter properly after fermentation. If required add some more salt.
7. Mix all chopped vegetables, Add red chilli powder & salt & mix well.
    You can use any veggies of your choice.
8.Grease non stick griddle with little oil. Prepare utappa with the veggies toppings.
    This Uttappa really tastes awesome moreover it is healthy too.
Enjoy with sambar or chutney !!

Sweet corn, Chana dal & Moong dal snack

One very tasty & healthy snack !!!! 
Even can be used as side dish in Lunch or Dinner!!




Ingredients :
Fresh or frozen sweet corn : 3/4 cup
Chana dal : 3/4 cup
Moong dal : cup 1/4
Curry Leaves :  7-8
Green chilli paste : 1 tsp
Garlic paste : 1 tsp ( optional )
Oil : 4 tsp
Cumin seeds : 1/2 tsp
Sesame seeds : 1 tsp
Hing : 1/4 tsp
Lemon Juice : 3 tsp
Salt : 1 tsp or as per taste
Sugar : 1 tsp
Roasted peanut powder ( coarsely grounded) : 3 tsp

For garnishing :
Fine sev ( nylon sev )
Chopped Coriander
Pomegranate seeds

Recipe :
1. Soak chana dal & moong dal for 4-5 hours.
2. Drain all the water on sieve.
3. Pressure cook the drained dals & sweet corn for 3 whistles without keeping water in container. Keep dals & sweet corn in separate containers.
4. Let it cool completely. Then grind dals & half of the sweet corn coarsely. Keep half of the corns     whole.
5. Heat oil in a heavy bottom pan or kadhai.
6. When oil becomes hot add cumin seeds, sesame seeds, hing, turmeric powder. garlic & chilli paste.
7. Then add coarsly grounded dals  & corn. Add salt, sugar & lemon juice. Mix properly. Cover the pan & let cook for 5 minutes on the steam. Open the cover & stir again. Add whole cooked corns. Again cover for 2 minutes. Add peanut powder, stir & off the flame.

Garnish with sev, pomegranate seeds & coriander & enjoy this tasty & healthy dish!!
     



Suji halwa ( sheera ) with jaggery

Ingredients :
Suji : 1  Cup
Jaggery : 3 /4 Cup 
Milk   : 1 Cup
Water : 1 cup
Sliced Banana : 1/2 cup
Elaichi (Green Cardamom) powder : 1/2 tsp
Black raisins : 4 tsp
Desi Ghee : 4 tsp
Raisins : 2 tsp
Coarse almond powder : 2 tsp
Small pinch of Salt.


Recipe :
1. In a heavy bottom pan or kadhai add 3 tsp of desi ghee.
2. When ghee dissolves add suji in it & roast properly till it turns brownish red. You will come to know with its heavenly aroma. Add sliced banana & mix it in suji. save some slices for decoration.
3. On another gas stove boil water with jaggery & elaichi powder.
4. Add hot milk in that mixture & turn off the gas.
5.Pour this mixture into roasted suji.
6. Mix it properly & cover the pan. Keep it on low flame till all milk &  water mixture evaporates. 
7. At this stage add remaining 1 tsp ghee mix again properly & turn off the flame.
8. Let it covered for 5 minutes.
9. Garnish it with raisins, almond powder & banana slices & enjoy!!




Baked bhajni wadi

We all prepare bhajni thalipith. It is one of the favorite & popular maharastrian  recipe. I tried this recipe by adding some veggies & other ingredients .It turned out very tasty & healthy too!!!
Moreover its baked !!



Ingredients :
Thalipith Bhajni : 2 cups
Rice flour : 1/4 cup
Sprouts : 1 cup ( I used moth ( matki), green whole moong & whole masur) (All sprouted at home)
Spinach : 1 cup
Grated carrot : 1/2 cup
Sweet corn  : 1/4 cup
Chopped onion : 1/4 cup
Plain yogurt : 1/2 Cup 
Water : 1/2 Cup or as required
Potato : 1 medium size boiled & cut into big pieces
Chilli paste : 1 tsp
Red chilli powder : 1 tsp
Turmeric powder : 1  tsp
Sesme seeds : 2 tsp
Ajwain  seeds : 1/2 tsp
Salt : as per taste
Sugar : 1tsp
Baking powder : 1 tsp
Olive Oil : 4 tsp ( any type oil can be used)




Recipe :
1. Pressure cook all the sprouts to 2 whistles.
2. In a big bowl take thalipith bhajni & rice flour.
3. Add half cooked sprouts,chopped onion, carrot, spinach,sweet corn & boiled potato pieces.
4. Add sesame seeds, green chili paste, red chili powder, turmeric powder, ajwain , salt, sugar  & yogurt.
5. Mix well. Add water as required. consistency should be like cake batter.
6. Add olive oil. Add baking powder.
7. Grease the baking tin & pour the mixture into it.
8. Bake in the oven for about a hour at 180 C.
9. Cut into pieces as you like , shallow fry in a pan  & enjoy !!!

Diet Chivda

Very Healthy flavourful Chivda , good for evening snack !!!  





Ingredients :
Flattened puff rice ( not  murmura ) : 3 cup

Mint leaves ( Pudina ) : 1/2 cup
Red chillies : 3
Hing : 1/4 tsp
Lemon Juice : 2 tsp
Salt : 1 tsp or as per taste
Sugar : 1 tsp
Roasted peanuts : 1/2 cup
Oil : 4 tsp

Recipe :
1. Heat a heavy bottom pan on gas stove.
2. Add curry leaves & 1/2 tsp oil.
3. Stir properly till it becomes crispy. Keep it aside.
4. Then add chopped coriander, mint leaves & red chillis in the same pan.
5. Again add 1/2 tsp oil & make it crispy. Let it cool.
6. Grind crispy curry leaves, chopped coriander, mint leaves & red chillies alongwith sugar & salt to a fine powder. Keep aside.
7. In the same pan heat remaining oil.
8. Add hing . Add lemon juice.
9. Immediately add roasted peanutes & ground powder. Mix properly.
10.Add bhajke pohe & mix well.
11.Store in a airtight glass container.

Enjoy this light green healthy snack with hot tea!!!


Besan poli

This is very easy recipe which tastes close to puranpoli. The new cooks can give first attempt to this recipe before trying puranpoli!!



Ingredients:
For filling
 Besan : 1 cup
 Sugar : 3/4 cup
 Desi ghee : 1/2 cup
 Milk :1 cup
 Water : 1/4 cup
  Elaichi/ jaiphal powder : 1/2 tsp
  Roasted poppy seeds : 1 tsp
Save 2 tsp ghee to roast the besan poli.

For outer cover:
 Ata : 1 cup
 Oil : 5 tsp
 Salt : 1 pinch
Water : 3/4 cup or as required

Recipe:
1. Heat desi ghee in a heavy bottom pan.
2. Add besan into the ghee and roast it till it becomes nice brown.
3. Boil milk & water together simultaneously on another gas stove.
4. Add it into besan and cover the pan,
5. When basan is cooked and all the water is evaporated add sugar & roasted poppy seeds, mix well and again cover it for 3 minutes.
6. It will be like sheera or besan halva.
7. Knead it till it becomes smooth. Keep aside.
9. Prepare a nice smooth dough of ata by adding salt water & oil.
10.Take a small ball of ata . Prepare small roti out of it. Not very thin.
11. Prepare a besan ball to fill in .Take as much as besan sheera to fill in the roti.
12.Prepare a besan poli & roast both sides to light brown colour on non stick pan by adding little ghee.
Enjoy this delicious Besan poli with ghee!!














Quinoa & Sabudana Khichadi

Ingredients :
White Quinoa : 1 cup
Sabudana : 1 cup
Coarsely ground peanuts : 1/2 cup
Chopped boiled potato : 1/2 cup
Fresh grated coconut : 1/2 cup ( frozen coconut can be used )
Finely chopped coriander : 1/2 cup 
Salt : 2 tsp ( as per taste )
Sugar : 3 tsp
Lemon juice : 4 tsp
Vegetable oil : 4 tsp
Desi ghee : 2 tsp
Cumin seeds : 1 tsp
Green chilli paste : 1 tsp ( as per taste )

Recipe :
1. Soak sabudana for 4 hours in a bowl.
2. Soak Quinoa for 2 hours in a different bowl.
3. Pressure cook Quinoa for 2 whistles.
4. Let it cool completely. Quinoa should not be sticky.
5. Mix sabudana, cooked quinoa, sugar, salt, peanut powder, fresh grated coconut & coriander in a big bowl. Save some coconut & coriander for garnishing. 
6. Heat oil & desi ghee together in a heavy bottom vessel or kadhai 
7. Add cumin seeds & fry for few seconds.
8. Add boiled potato & saute for 2 minutes.
10.Add sabudana & Quinoa mixture.
11.Mix properly. Saute for some time.
12.Cook for 5 minutes keeping lid on the kadhai. Mix again.
13.Garnish with fresh coconut & chopped coriander.
14.Serve with plain yoghurt this tasty recipe.

Ingredients :
Chopped Coriander : 2  Cups
Besan ( Gram flour ) : 1 Cup
Rice Flour : 1 tb 
Butter milk  : 1/2 Cup
Water : 3/4 Cup
2-4 Green chillis  or 1tsp chilli paste ( as per your requirement )
Garlic & Ginger paste : 1 tsp each
Roasted sesame ( Til ) seeds : 1 tb sp
Ajwain ( owa ) : 1/2 tb sp
Coarsely ground Peanuts : 2 tsp
Salt : as per taste
Sugar : 1 tsp
Oil ( any ): 2 tb sp
Mustard seeds : 1 tsp
Cumin seeds : 1 tsp
Hing : 1/2 tsp
Turmeric powder : 1/2 tsp

Recipe :
1. Take a big microwavable bowl .

2. Add chopped corriender, besan, green chilli paste, garlic & ginger paste, Ajwain , sesame seeds, Peanut powder, butter milk, water & mix well.

3. Prepare seasoning ( Tadka ) by adding mustard seeds, cumin seeds, hing & turmeric powder.

4. Add in the above mixture & mix well. 

5. Keep the bowl in microwave oven for 4 1/2 minutes covering with lid.

6. Take the bowl out from microwave oven & stir the mixture properly.

7. Keep the bowl again in microwave oven for 3 minutes covering with lid.

8. Take the bowl out from microwave oven, stir properly & check the mixture. It becomes thick when it is cooked.

Take this mixture in a greased trey or thali & spread when it is hot.

9. Cut into square shape pieces or as you like.

Shallow fry the pieces with little oil  to brown colour & enjoy hot  with chutney or Tomato sauce !!
You can eat it without frying if you like !!



Ragi Idli

Ingredients :
Ragi flour : 1  Cup
Idli Rice  ( boiled rice or ukda rice ) 1 Cup
Urad dal ( Black Gram ) : 3/4th Cup
Chana  dal  (Bengal Gram )  : 2 tb sp
Methi  (Fenugreek seeds)  : 1/4 th tb sp
Pinch of Soda bicarb ( optional )
Oil : 2 tb sp
Rai ( mustard seeds) : 1 tb sp
Jeera ( cumin seeds )
Hing (asafoetida ) : 1/2 tb sp
Curry leaves : 8-10
Salt : as required

Recipe :
1. Soak Idli rice for 4-5 hours in a bowl

2. Soak Urad dal , Chana Dal & methi seeds in another bowl for 4-5 hours.

3. Drain the water. But do not throw it. Use it for grinding.

4. Grind all the ingredients to very smooth batter. Add ragi flour while grinding the other ingredients.

5. Pour the batter in the vessel & mix it thoroughly.

6. Keep this batter overnight for fermentation. Take large bowl otherwise batter will come out after fermentation.

7. Add salt as per taste & mix batter gently.

For tempering :
Heat the oil in a pan . Add mustard seeds, cumin seeds, asafoetida & curry leaves.
Let it cool for some time. Tempering is optional as per individual taste. I prepare plain idlis.

8. Add this tempering in the idli batter.

9. Grease the idli mould & pour  the batter into it.

10. Steam the idlis in pressure cooker (without keeping pressure) or in the steamer for 10 to 15 minutes
.

Serve the steaming hot idlis with tomato chatni, coconut chatni, green chatni & sambar.





Microwave Masala Peanuts

Peanuts are a healthy snack, to make it more interesting I tried a quick, healthy and tasty Microwave Masala peanuts recipe without frying!




Masala peanuts or Sing bhujia is a popular snack which is traditionally fried, making it unhealthy. But here is a healthy version for guilt free snacking!  Amazingly tasty, easy to make and no frying required. This is truly a wish come true.

Ingredients :

Peanuts : 1 Cup
Gram floor (Besan ) : 1/3 Cup
Red chilli Powder : 1 tea spoon
Garam Masala     :   1 tea spoon
Chat Masala        : 1 tea spoon
Dried Mango Powder ( Amchoor ) : 1 tea spoon
Cumin powder ( Jeera Powder ): 1/2  tea spoon
Coriander Powder ( Dhana powder) : 1/2 tea spoon
Asafoetida ( Hing ) : 1 pinch
Water : As needed
Oil : 2 tea spoons or Pam spray

Recipe :
  1. Mix gram flour, red chilli powder, garam masala, dried mango powder, cumin & coriander powder in a large bowl and set aside.
  2. Do not add chat masala .
  3. In another bowl, add peanuts  and water until the peanuts are covered with water. Then pour the water along with peanuts in a sieve. This step is required so that peanuts get wet and excess water gets drained
  4. Add the moist peanuts to the dry mixture in the first bowl. Mix the peanuts thoroughly in the gram floor mixture. If you feel the peanuts are very dry then add 1-2 spoons of water & mix . All the peanuts should be coated nicely with the gram flour mixture.
  5. Grease the microwave safe dish with 1 tb spoon of oil or Pam spray .
  6. Pour the peanuts into the dish & spread evenly.
  7. Keep the dish in microwave oven for 3 minutes.
  8. Remove the dish & stir the peanuts. Separate them with the help of spoon & again spread evenly.
  9. Keep the dish  in microwave oven for another 2 minutes. Follow the step  again.
  10. Repeat the procedure for one more time for 1 or 2 minutes or till the peanuts become crispy.
  11. Remove the dish from oven. Sprinkle the chat masala on peanuts & let them cool.
  12. Upon cooling peanuts will be crispy. Store in a air tight container & enjoy !!!
