Sambar masala

 Samabar masala with very few ingredients to prepare tasty sambar !! 





Ingredients :

1. Coriander seeds ( Dhane ) : 1 cup
2. Chana dal : 1/4 th cup
3. Raw rice : 1 tbsp
4. Fenugreek seeds : 1 tsp
5. Curry leaves : Handful
6.Whole dry red chilli : 15 ( kashmiri + byadgi )
7. Hing : 1/2 tsp

Recipe :

1. Dry roast coriander seeds till it turn light brown.
2. Like wise also dry roast chana dal, rice & fenugreek seeds light brown.
3. Roast curry leaves till it become crunchy.
4. Roast dry red chilli & hing lightly.
5. Mix all the ingredients. Let mixture cools down completely.
6. Grind in mixer & store sambar  masala in airtight jar.
Use as required to prepare tasty & aromatic sambar.

Goda Masala

Goda masala is used in many maharastrian  recipes such as stuffed baigan & many other veggies having gravies. Also for famous Masale bhat!!!




Ingredients :

To be fried in little amount of oil :
Coriander seeds ( Dhane ) : 1 cup
Cumin seeds ( Jeera ) : 1/8  cup
Caraway seeds ( Shahi jeera ) : 1 tsp
Cloves ( Lavang) : 1/2 tsp
Cinaman ( Dalchini ) : 2 inch piece
Asafoetida ( Hing ) : 1 tsp
Dagadful : 1/8 cup
Star anise : 1/8 cup
Mustard seeds ( Mohri ) : 1/2 tsp
Fenugrik ( Methi )seeds : 1/4 tsp
Oil : 3 tsp

Dry roast:
Sesame seeds : 1/4 cup
Dry coconut : 1/4 cup

Turmeric powder & red chili powder are optional.
Turmeric powder : 1/2 tsp
Red chili powder : 1/4 cup

Recipe :
Roast all the ingredients in a heavy bottom pan by adding little oil. Add oil as per the quantity of ingredient. Do not over roast the ingredients as it affects the aroma of the masala. Roast till all the ingredients turn light brown.
Dry roast sesame seeds & dry coconut.
Do not roast turmeric powder & red chili powder if you want to add in masala.
Mix all the ingredients properly. Let the mixture cool down. Grind in a mixer & preserve in airtight jar. It  lasts more than year.

This home made masala has very fresh & nice aroma. It takes only half an hour to prepare!!
