Bourbon Biscuits

Children's favorite home-made bourbon biscuits !!


Ingredients :
For biscuits :
All purpose flour  ( maida ): 1 cup
Butter : 3 tbsp
Desi ghee : 2 tbsp
Cocoa powder : 2 tbsp
Powdered Sugar : 1/4 cup
Milk : 3 tsp ( use milk at room temperature )
Baking powder : 1/2 tsp
Vanilla essence : 1/2 tsp
Salt : A small pinch ( If you are using salted butter do not add salt )
Granulated sugar to sprinkle.

For cream :
Ingredients :
Butter : 2 tbsp
Cocoa powder : 3 tbsp
powdered sugar or castor sugar : 3 tbsp
Milk : 1 tsp
Mix all the ingredients together except milk. Add milk as required.
Do not make cream loose - it will come out from biscuits.

Recipe for biscuits :
1. Add butter & ghee in a bowl. Add sugar & beat till the mixture becomes light.
2. Sieve all purpose flour, cocoa powder & baking powder in the same bowl.
3. Add vanilla essence. Add 2 tsp milk.
4. Mix everything together to make a smooth dough. If required add a little milk.
5. Keep the dough in the fridge for an hour.
6. Take out the dough out from fridge. Roll it with a pin using butter paper. 
7. Cut the biscuits in long rectangular shape. Make holes above them with toothpick.
8. Sprinkle some granulated sugar on the biscuits.
9. Bake in preheated oven  at 170 C for 12 minutes.
10. Cool the biscuits completely.
11. Apply cream in between 2 biscuits & press gently. 
      
Your bourbon biscuits are ready!
Above measurement yields about 12 biscuits.
    
Enjoy with hot ginger tea or coffee. 

 

Rajgira whole wheat choco chip cookies

Healthy Rajgira flour & Whole wheat cookies !


Ingredients :

Rajgira ( Amaranth) flour : 3/4 th cup
Whole wheat flour : 3/4 th cup
All purpose flour ( maida) : 1/4 cup
Butter or desi ghee : 3/4 th cup
Milk : 3/4 th cup
Powdered Sugar : 3/4 th cup or adjust as per your taste
Dry ginger powder ( Sunth ) : 2 tsp
Salt : 1/4 tsp ( use only if butter is unsalted)
Chocolate powder : 1/4 th cup
Chocolate chips : 1/2 cup
Almond slices : for decoration ( optional )
Vanilla essence : 1 tsp
Baking powder : 1/2 tsp

Recipe :
1. Add all dry ingredients Rajgira flour, wheat flour, maida, baking powder, sunth powder & salt together in a bowl.
2.Mix properly & keep aside.
3. In another bowl add butter, sugar, vanilla essence. Mix properly with hand mixer till it becomes creamy. Add half cup of milk. Mix well with hand mixer.
4. Add the dry ingredients mixture gradually & mix till firm but smooth dough.Add chocolate chips.Save some for decoration on the top.  At this time use remaining 1/4 cup milk as per the consistancy of dough.
5. Roll the dough with pin & shape the cookies as you like. Decorate with choco chips & almond slices.
6. Preheat the oven at 160-170 C.  
7. Bake the cookies for 10-15 minutes depending on your oven. My oven took about 15 minutes to bake.
Above measurement yields about 20-25 cookies.
    
Enjoy with hot ginger tea or coffee. Also very good home made snack for children . 

Rajgira flour ( Amaranth seeds ) savoury cookies

                                                Healthy savoury rajgira cookies 



Ingredients :
Rajgira flour : 1 cup
Sabudana ( sago ) flour : 2 tsp
Coarsely ground peanut powder : 2 tsp
Roasted cumin seeds ( jeera ) : 1 tbsp
salt : 1 tsp or as per taste
sugar 1 tsp
Desi ghee : 6 tbsp
Yogurt  : 4 tsp ( use more if required )
Baking powder : 1/2 tsp
Baking soda : 1/2 tsp
Rajgira lahi for garnishing.

Recipe :
1. Add Rajgira, sabudana flour, peanut powder,salt, sugar,baking powder & baking soda . Mix all dry ingredients.
2.Add desi ghee & yogurt. Mix all the ingredients properly.
3. Do not over knead the dough. It should be little lose & soft. Add more yogurt if required.
4. Prepare the cookies as per shape you desire. Sprinkle some rajgira lahi on the cookies.  
5. Bake the cookies in preheated oven at 170 C for 15-20  minutes or till it turns light brown.
6. Adjust the temperature as per your oven.
Above measurement yields about 15 medium sized biscuits.
    
Enjoy with hot ginger tea or coffee. Also very good home made snack for children . 
You can eat these cookies for fast also.

Ginger coconut whole wheat biscuits

Ingredients :
Whole wheat flour : 1 cup
Desi ghee : 6 tbsp
Dry ginger powder ( sunth ) : 4 tsp
Fresh coconut : 2 tbsp ( Desiccated coconut can be used )
Milk : 3 tsp ( use milk at room temperature )
Baking powder : 1/4 tsp
Powdered sugar : 4 tsp
Salt : A small pinch
Recipe :
1. Add whole wheat flour, ghee, coconut  & sugar  in a bowl. Mix it properly to get crumbly texture.
2.Add milk & baking powder. Mix all the ingredients properly.
3. Do not over knead the dough. It should be little lose & soft.
4. Keep in the fridge for 15 minutes.
5. Take out from fridge & roll the dough like roti .
6. Cut in the shape as you like with cooky cutter.  
7. Bake the biscuits in preheated oven at 150 C for 10  minutes or till it turns light brown.
8. Adjust the temperature as per your oven.
Above measurement yields about 22 medium sized biscuits.
    
Enjoy with hot ginger tea or coffee. Also very good home made snack for children . 


Golden Oats cookies

Ingredients :
All purpose flour ( Maida ) : 11/4 cup
Rolled Oats :1 cup
Castor sugar or Powdered sugar : 3/4 cup
Desiccated coconut : 3/4 cup
Golden syrup : 1 tsp ( easily available in the market )
Butter : 1/3 cup
Vanilla essence : 1/2 tsp
Baking soda : 1/2 tsp
Boiling water : 1 tsp

Recipe : 
1.In a mixing bowl mix sifted flour( maida ), oats, dessicated coconut & sugar.
2. combine butter & golden syrup in a pan & heat on low flame until butter melts & mixture becomes smooth. Turn off the gas.
3. Dissolve baking soda in boiling water & immediately add to butter mixture. Mix well.
4. Mix dry mixture & butter mixture well.
5. Shape the mixture with one level of tablespoon into ball or shape as you like. Put on lined tray.
6. Bake in preheated  the oven at 180 C for 15-20 min or till cookie turn golden brown.s
9. Cool for 2 minutes. Transfer on wire rack & cool completely.
10. Store in a air tight container.


Thumb print jam cookies

Eggless thumb print jam cookies!!


Ingredients :
All purpose flour ( Maida ) : 1 cup
Butter : 3 tbsp ( I used Amul butter )
Desi ghee : 1 tsp
Powdered sugar : 3 tsp ( Add more if you want more sweetness. )
Vanilla essence : 1/2 tsp
Jam : for filling ( I used mix fruit jam )

Recipe : 
1.Beat butter & sugar in a bowl with mixer. I used hand beater.
2. Mix till mixture becomes fluffy. 
3. Add Vanilla essence & mix well.
4. Add flour & desi ghee. Make a nice dough.
5. Keep the dough in Fridge or 1/2 an hour.
6. Keep tray ready with butter paper. Greasing is not required.
7. Prepare the balls with hollow in the centre.
8. Fill with jam. Bake the cookies at 180 C for 10 to 12 minutes.
9. Cool for 2 minutes. Transfer on wire rack & cool completely.



Crispy jeera thins

Ingredients :
All purpose flour ( maida) : 1 cup
Butter : 4 tsp 
Salt : 1/4 tsp
Plain yoghurt ( dahi ) : 3 tsp
Cumin seeds : 1 tsp ( I used shahi jeera) can use normal cumin seeds

Recipe :
1. Add maida, salt, butter, yoghurt & cumin seeds in a bowl. Crush cumin seeds on hand for a while so that it will give good aroma.
2. Knead the dough to mix all the ingredients properly.
3. Do not over knead the dough.
4. Keep aside for 5 minutes.
5. Roll the dough like roti .
6. Cut in the shape as you like with cooky cutter.  
7. Bake the jeera thins  in preheated oven at 160 C for 5 to 7  minutes or till it turns light brown.
8. Adjust the tempeture as per your oven.
Above measurement yields about 30 medium sized buiscuits.
