Eggless orange and chocolate cupcakes, flavoured with fresh orange juice and zest.
Ingredients
- All-purpose flour (maida): 2 cups (250 ml cup)
- Chocolate powder: 4 tbsp
- Powdered sugar: 1 cup
- Orange juice: 3/4 cup (I used fresh orange juice)
- Orange zest: 1 tbsp
- Vanilla essence: 1 tsp
- Water: 1/2 cup, or as needed for consistency
- Any odourless vegetable oil: 1/4 cup
- Baking powder: 1 tsp
- Baking soda: 3/4 tsp
- White vinegar: 1 tsp
- Salt: a small pinch
- Chopped cashews: 2 tsp
- Golden raisins: 2 tsp
Method
- Sift all the dry ingredients (maida, chocolate powder, baking powder, baking soda and salt) into a large bowl. Mix well and set aside.
- In another bowl, put the oil, sugar, orange juice, water and vanilla essence, and mix with a hand mixer until the sugar dissolves. Add the orange zest.
- Add this mixture to the dry ingredients and fold it in well. There should be no lumps. Add the golden raisins.
- Add more water if needed until the batter reaches a dropping consistency. Add the white vinegar and mix gently.
- Pour the batter into paper cupcake moulds and top with chopped cashews.
- Bake in a preheated oven at 180°C for 15–20 minutes.
This recipe makes 18–20 cupcakes. Enjoy these delicious, flavourful cupcakes with tea or coffee.
